White Bean Chicken Chili
Prep Time: 10 Minutes
Cook Time: 25 Minutes
Ready In: 35 Minutes
Yields: 9 servings
2 tablespoons vegetable oil
1 pound diced, cooked chicken meat
1 onion, chopped
2 cloves garlic, minced
1 (14.5 ounce) can chicken broth
1 (18.75 ounce) can tomatillos, drained and chopped - you can use diced tomatoes in place of tomatillos if you cannot find them [in addition to the ones listed below]
1 (16 ounce) can diced tomatoes
1 (7 ounce) can diced green chiles
1/2 teaspoon dried oregano
1/2 teaspoon ground coriander seed
1/4 teaspoon ground cumin
1 (15 ounce) can white beans
2 ears fresh corn (or one small bag of frozen corn)
salt to taste
ground black pepper to taste
1 lime, sliced
1. Heat oil, and cook onion and garlic until soft.
2. Stir in broth, tomatillos, tomatoes, chilies, and spices. Bring to a boil, then simmer for 10 minutes.
3. Add corn, chicken, and beans; simmer 5 minutes. Season with salt and pepper to taste.
4. Serve with these toppings for people to choose from: limes, cilantro, cheese, avocado, sour cream, and tortilla chips.

A nice bit of steak cooked on a BBQ along with sauteed mushrooms and onions and a nice vege chilli sauce
I use the chilli sauce as you need a bottle of a good red wine. The recipie only needs .25 of a cup, You drink the rest while waiting for your creation to evolve
Another option is take 1 orange, chop it up skin and all the put thru food processor and then matinate lamb chops(rib or leg chops) cook on BBQ or fry pan and add any other veges or side dishes you like

SIMPLE AND LOW CARB
FISH
Preheat oven to 500 degrees.
Put a nice fillet on a cookie sheet (either grease the cookie sheet or line it with non-stick foil or some parchment paper.)
Pour salsa over the filet, bake about 10 minutes, depending on the thickness of the filet, until it flakes easily and the flakes are transparent.
SALAD
Romaine lettuce, orange slices, feta cheese, a sprinkling of salted sunflower seeds or pepitas (pumpkin seeds).
Dressing- good balsamic vinegar and extra virgin olive oil.
CHICKEN
Marinate several breasts (for 3 meals) in Fat Free Italian Dressing overnight or at least an hour. Take out of marinade. Bake on prepared baking pan at 375 degrees for 20- 30 minutes, depending on thickness.
VEGGIE
Slice yellow squash and/or zucchini lengthwise. Toss with a teaspoon of extra virgin olive oil. Add to cookie sheet with chicken. They are best when the edges start to brown. Really succulent and yummy.
While chicken cooks, put marinade in skillet and cook down until it is thick and sirupy.
When chicken is done, plate and pour marinade/sauce over.
Serve with same salad as fish (vary the fruit) and the squash or a veggie like steamed green beans, broccoli, or
Meal 2-
Make your favorite salad on a large deep plate. Slice one of the cooked chicken breasts and arrange on salad. Use your favorite dressing.
Meal 3-
Use the other cooked chicken breast to make a stir fry.
Slice onions, carrots, zucchini, bok choy, mushrooms, garlic, etc. Stir fry in a little oil (I like sesame oil) until crisp tender, Add some soy sauce. Toss well. Add the chicken breast, cut in strips or chunks.
PORK
Buy a seasoned pork loin like Hormels. They come in Terayaki and other seasonings. They cook in about 20- 30 minutes. Use for several meals, just as you do with the chicken breasts. They make a great meal with veggies or a salad. The leftovers go great with a salad or in a quick stir fry.

So you are looking basically to cut carbs.
Almost any meat can be made special with a little fruit relish which can be made from this seasons fruits now easily available.
Chicken beast, grilled or pan seared, top with a fruit relish and serve over wilted spinach greens.
Fresh fish fillets baked or poached toped with fruit relish and served over baby sprouts.
London broil sliced very thinly, cook quickly in fry pan with jerk sauce and serve over mustard greens that have been cooked with sliced almonds and mandarin orange slices.

do you have a crock pot?
One of my favorites lately is apricot chicken
6 chicken breast halves
1 jar apricot preserves
russian or french dressing (about double the amount of apricot preserves)
Mix the preserves and the dressing
Put the chicken in the crock pot
put the mix in the pot
stir it so it covers all sides
low 6 to 8 hours.
And, to make it not use anything from the bread group, serve it with sticks of carrots and celery.

How about a veggie stew? You can even add meat if you want...just stick to root vegetables (no potatoes). I just made a pot of stew with carrots, onions, celery, lean pork and tomatoes. Add vegetable broth and some wine....yum!!
You can also add green beans if you like.
