I'll be the serving the cupcakes as dessert for my son's 5th birthday party in school.

Dude I'm the queen of cupcakes, they're vegan but AMAZING, all my friends like them and ask for them a lot and I'm in high school, email me with his favorite flavor and I'll send you an amazing recipe for them and icing...

Buy whatever flavor cake mix your son enjoys the most. Fill your lined cupcake tins 2/3 full and bake - time should be shown on the package. Cool fully and frost with your favorite buttercream frosting. Finish off with some sprinkles. Or if he has a favorite color that's not going to make things unappealing - tint the frosting. You can transport them in a shirt box or that sort of thing. Just make sure it's tall enough to be able to put the lid on it.

They are muffins rather than cupcakes, but you can ice them anyway I suppose.

I made some of these this morning using peach jam and they were mighty good. And I generally don't much like muffins.

MUFFIN SURPRISES

1 3/4 c. all purpose flour
1/4 c. sugar
2 1/2 tsp. baking powder
3/4 tsp. salt
1 egg
3/4 c. milk
1/3 c. cooking oil
Jelly or jam

Turn the oven to 400 degrees. Grease a 12 muffin pan or put in paper bake cups. Measure flour, sugar, baking powder and salt into mixing bowl. Mix it with a wooden spoon. Use a fork to beat eggs in a small bowl. Add the milk and oil. Beat with fork until well mixed. Pour milk mixture over flour mixture. Stir with wooden spoon only until flour is set. Batter should be lumpy. Do not stir too much or muffins will be hard. Spoon half the batter into muffin pans until about 1/3 full. Put a teaspoonful of jelly or jam in each cup. Fill the muffins with remaining batter. Put the muffins in to bake. Bake them until they are golden. This will take 20 to 25 minutes. Remove the muffins from the pan with a table knife. Let cool and enjoy.

If you just want something simple then you can just buy some cake mix and icing from the store. Make the cake batter as directed on the box, using a muffin pan place one paper baking cup in each tin, pour equal amounts of the batter in the cups, bake for about 20-30minutes, check the center of one cupcake by inserting a toothpick in the center and if it comes out clean then they're ready. If you want to be a little creative you can always get white cake mix or vanilla icing and add food coloring to it.
