Hmmm, classic...I would have to say some good homemade scalloped potatoes and maybe green beans amandine
These sound delicious, but I haven't made these recipes myself...I'll have to save them and try them sometime!

I would think twice baked potatoes and steamed asparagus would be considered classic, whether wearing black tie or black shorts. Because of the Dijon crust, I would only use a little butter on the asparagus. Don't forget a nice salad - either a combination/tossed salad or Caesar salad would be excellent with the filet.

The vegetable seems obvious to me, but being as I love steak... Maybe steamed spears of asperagus, perhaps with hollandaise or whatever sauce you prefer.

Potato is a little trickier... Mashed is good if it's not plain. You know, add some spice, onion, bacon, whatever... Make sure the gravy is good.

Standard baked is a good choice, with toppings.

I suppose there would be appropriate potato salad recipes out there. I'm not sure if you're trying to avoid traditional recipes for some reason...

Personally I'd rather see a good cream of potato soup, but I'm not sure that you would consider that a side... You may already have soup planned.

What is wrong with a plain baked potato? I'm sure you will have a salad and dessert. I like mushrooms with my steak and potato.
PS: I think people like to eat the same no matter if they are wearing a tie or jeans.

Some ideas that are classic and look good:

Roasted aspargus, roasted and herbed red bliss potatoes. mashed potatoes with chive butter, buttered french string beans

Grilled asparagus comes to mind and cubed red potatoes mixed with butter and dill. Those will add nice color to your plate, too. If you want to add some yellow, saute some type of sliced yellow squash.
