I have this huge container of candied ginger in my cabinet that has been there for about 6 months. I totally forgot it was there because it was pushed behind other things and I was thinking of baking cookies with it to use it up. Do you think it's still good? What do you think its shelf life is once opened? I

Hi !!!
The shelf life seems to be indefinitely...but I would think it would be better to use candied ginger before one year from the opening of the package...This lady has loads of information on candied ginger...here is just a little of what she has to say...

Ginger prepared in this manner will keep indefinitely. If it does dry
out after a time, do not discard, simply chop finely and use in cooking
or baking.
Or you can dry it in a very low oven and grind to a fine powder in a spice grinder.

Candied ginger will last relatively forever

it should be ok if it was sealed
