Cut into wedges with blue cheese dressing, crumbled bacon, finely chopped well drained fresh tomato and chives. It is a classic that is quite popular again at steak houses such as Mortons.

Actually I would not suggest an icebery wedge for a black tie dinner. I think a spring salad mix with baby spinach leaves works best. With a light dressing, cherry tomatoes, pecans and goat cheese. But, you can make a wedge with blue cheese dressing as that is the classic for iceberg. Or if you hate blue cheese, have a good ranch dressing. it is just a bit messier for black tie.
