Okay...For example, I'm talking to my mom on my cell phone at my house. At the time, my cell phone is using the tower nearest to my house. While I'm talking to her I leave and go 60 miles north east to Austin. How is it that you can keep an un-interrupted conversation eventhough you change so many towers?

Computers monitor the signal strength for your phone at various towers and switch to another tower as the first one weakens. How smooth it is depends on location of the towers and paths and the fact that digital signals can be stored and repaired, removing flaws. Yet there are small dropouts and missed words.
If you have a small pocket radio, tune it to the middle of the dial (I listen to 101.1) while you are traveling with a cell phone - mine periodically does a squeeky beep as it queries for available towers. Same thing while someone using it.
