Stuffed and breaded jalapeno peppers w/ cheddar and cream cheese in the center

Mini fajita rolls with toothpicks in them

Bruschetta w/ green onions , tomatoes, parsley, basil, red chili pepper, olive oil - toasted (good hot or cold)

Egg rolls - buy egg roll pastry from grocery store, roll up with any combination of meat and veggie and spice...fry in oil in a skillet

Make a taco salad with ground beef&seasonings, jalapeno peppers, cheddar cheese, tostitos, spicy salsa, sour cream etc..

Or make a huge bowl of picante salsa, put it in a pretty bowl and ser ve on a big plate with multi coloured nacho chips around it

Fancy mac and cheese - make a big casserole dish of mac and cheese, extra cheesy...with ground beef and taco seasonings and cheddar cheese sprinkled on top

Antojitos Minis

INGREDIENTS
4 (12 inch) flour tortillas
3 ounces shredded white Cheddar cheese
3 ounces shredded Monterey Jack cheese
3 ounces shredded Cheddar cheese
1 tomato, diced
1 cup chopped red bell pepper
1/8 cup chopped green onions
1/3 cup black beans, drained
2 tablespoons hot salsa
1/8 teaspoon chili powder

DIRECTIONS
Preheat oven to 425 degrees F (220 degrees C). Lightly grease two 12 cup muffin pans.
Cut each tortilla into 6 smaller round pieces. Insert the pieces into the muffin tin cups. Arrange the white Cheddar cheese, Monterey Jack cheese, Cheddar cheese, tomato, red bell pepper, green onions, black beans, hot salsa and chili powder in the cups as desired.
Bake in the preheated oven 5 minutes, or until the cheeses are lightly browned and bubbly.

This is not a spicy recipe, but it is a great appetizer and it also goes great with regular meals. Cheezy bread poppers--2 cans refrigerated buttermilk bicuits (NOT the layered biscuits), 1 bag cubed monteray chedder cheese,1 cup parmesan cheese and 1-2 Tbsp. italian seasoning, 4Tbsp. melted butter. Preheat oven to 375. Open biscuits and flatten to about 3-4 in. round. Place 1or 2 cubes cheese in center and wrap up, sealing the edges and then roll into a ball. Mix parmesan cheese and italian seasoning in small bowl and set aside. Dip balls in butter then roll in parmesan mixture. Place in greased pan at 1 in. apart and bake till browned. These are delicious dipped in pizza sauce or ranch dressing!

Hot and Spicy Chex Party Mix

3 cups Corn Chex
3 cups Wheat Chex cereal (sometimes you cannot find Wheat Chex, go ahead and use another 1 ½ cups of each of the other two cereals)
3 cups Rice Chex
1 tablespoon Worcestershire sauce
2 to 3 teaspoons red pepper sauce
1 cup pretzels
1 cup mixed nuts
1 tsp pepper
1/4 cup margarine or butter (do not use spread or tub products)
1 1/4 teaspoons seasoned salt

Heat oven to 250°. Melt margarine in large roasting pan in oven. Stir in seasonings. Gradually stir in remaining ingredients until evenly coated. Bake 1 hour, stirring every 15 minutes. Store in airtight container.

Deviled Eggs
INGREDIENTS:
6 hard-cooked eggs
1 to 1 1/2 tablespoons mayonnaise, or to moisten
1 teaspoon prepared mustard, or to taste
1/2 teaspoon salt
2 tablespoons sweet pickle relish, or to taste
paprika
PREPARATION:
Cut hard-cooked eggs in half lengthwise. Remove and mash the yolks; combine with mayonnaise, mustard, salt, and relish. Refill centers of the egg whites with the mixture. Garnish with ground paprika.

Salmon Log Appetizer
INGREDIENTS:
1 (16 ounces) can red Salmon
1 (8 ounces) package cream cheese
1 cup finely chopped onion
1/4 cup sweet pickle relish
1 tablespoon celery salt
1 clove garlic, finely minced
1 teaspoon salt, or to taste
1 cup finely chopped pecans or walnuts
PREPARATION:
Combine salmon, cream cheese, onion, relish, celery salt, garlic, and salt in large bowl. Mix thoroughly and shape into 2 small logs. Roll loaves in chopped nuts; chill thoroughly. Good with crackers or use for sandwiches.
Makes 2 salmon appetizer logs.

Grape Jelly Meatballs
INGREDIENTS:
2 pounds lean ground beef
1 tablespoon parsley flakes
2 teaspoons dried leaf oregano
2 teaspoons dried leaf basil
1/4 teaspoon garlic salt
1/2 cup bread crumbs

Sauce:
1 cup ketchup
1/3 cup lemon juice
1/3 cup grape jelly
PREPARATION:
Mix all ingredients together; shape into 1-inch balls. Brown in a large skillet. Place meatballs in a baking pan.
Combine sauce ingredients; add to meatballs and bake at 350° for 30 to 35 minutes.
Makes about 3 dozen appetizer meatballs.

Rotel dip always goes over big, if you have access to a microwave. Chunk up a block of Velveeta in a bowl-add a can of Rotel tomatoes & chiles-microwave 2 minutes, stir, repeat until melted and smooth-serve with tortilla chips. You can add some cooked chicken, ground beef or sausage as well if you want.

PEPPERONI CHEESE BITES (Easy!!! and delicious)
1- 4 oz bag pepperoni
8 oz pkg cheddar, monterrey jack, or colby cheese
1 pkg Triscuits or a sleeve of Ritz or Club crackers
Slice cheese into pieces that would fit on a piece of pepperoni.
Lay a piece of cheese on each cracker. Top with 2 pieces pepperoni.
Microwave on high 20 seconds.
Have fun!

Blue Cheese and Bacon Puffs

3 slices thick-sliced bacon, diced

1/2 cup milk
1/2 cup water
6 Tablespoons unsalted butter
1/2 teaspoon salt
1/4 teasponn black pepper
1/4 teaspoon cayenne

1 cup flour
4 eggs

4 ounces blue cheese, crumbled
1/4 cup Parmesan cheese, grated
1/4 cup scallions, green part only, sliced

Preheat oven to 425 Degrees with rack in the lower third of oven.

Saute bacon in a small skillet over medium-high heat until crisp. Drain on paper towel-lined plate.

Bring milk, water, butter and seasonings to a boil in a medium saucepan over medium heat.

Add flour and stir mixture with a wooden spoon until dough forms a ball around the spoon. Cook until it starts to stick slightly on bottom and side of pan. Remove from heat and cool slightly.

Beat in eggs, one at a time, until completely incorporated. Use a food processor for easier incorporation of eggs. Add eggs in a steady stream and process for 30 seconds.

Put mixture in a large bowl and stir in both cheese, scallions, and reserved bacon. Using a 1-teaspoon scoop or measure, drop dough 2 inches apart onto parchment-lined baking sheets. Bake 20-25 minutes, or until puffs are browned and crisp. Serve warm or at room temperature.

Bacon and Green Chile Roll-ups

8 slices bacon
1 (9-oz.) container Fritos Bean Dip
4 oz. cream cheese, softened
3 to 4 super-large flour tortillas
1/4 cup finely chopped red bell pepper
1 (4.5-oz.) can Old El Paso Chopped Green Chiles

Cook bacon until crisp. Drain on paper towels. Crumble bacon; set aside.

In medium bowl, combine bean dip and cream cheese; mix well. Spread each tortilla with bean dip mixture. Sprinkle each with bell pepper, green chiles and bacon. Roll up each tortilla. Wrap each in plastic wrap. Refrigerate over night.

To serve, cut rolls into 3/4 inch pieces.

For some reason people LOVE salami with cream cheese. If you do a lot of them, it ends up looking pretty cool, and it's really easy. I also like to roast my own peppers and serve with fresh mozzarella and basil. Another thing people think I spent days on, but I didn't.

Don't waste your time go to the delli.
Hot...!! either a cheese plate or a meat plate
ask the butcher or ???
the cost will be a reward by the guests and compliments you get. You might add some fancy crackers or breads.
