castilian spanish // standard european spanish :

usted = second person singular formal
ustedes = second person plural formal

but both are constructed on the base of the third person (singular/plural)

->
usted habla = you speak (formal singular)
ustedes hablan = you speal (formal plural)

Ustedes is a form of you all
Usted is just you. However it is used for respect. i.e a teacher or parent. Someone that you are not familiar with.

Usted is conjugated to the he/she/it form so it would be rompe
Ustedes is plural so it would be rompen

romper is not a stem change verb
