Apple stuffed french toast
In a small saucepan combine:
1C brown sugar
1/2 C cubed butter
2 T light corn syrup
and heat until thickened. Pour into a greased 9x13 baking dish. Cover with 1C chopped pecans and top with 8 slices of bread. Top with 1 1/2 C sliced apples.
In a separate bowl, combine 6 eggs, 1 1/2 C milk, 1tsp vanilla, 1 tsp nutmeg an 2 tsp cinnamon. Pour over bread and refrigerate overnight.
Bake at 350 for 40 min
Yum!
If you dont like french toast, quiche is also a great breakfast/brunch item

Biscuits and sausage gravy. The sausage gravy is made by frying the sausage and then adding flour and milk in equal amounts and cooking as it thickens.
The Biscuits, just use biscuick and follow the recipe. The rest I would use alot of cereal, lowfat unsweetened yogurt, fresh fruit and oatmeal. The oatmeal and freshfruit are great added to the yogurt or by themselves.
Fried eggs are yummy but remember if you do eggs you have to do bacon cause fried eggs are only good if fried in bacon grease.
French toast is easy, as are pancakes make with a "just add water" mix, both of which should be made with butter in the pan.

A big breakfast casserole is a nice (and easy!) way to feed everyone! I have added frozen hashbrowns to it, also!
12 ounces mild bulk sausage
12 ounces hot bulk sausage
10 eggs, lightly beaten
1 cup sour cream
1 large onion, chopped
1 green pepper, chopped
1 red pepper, chopped
1 zucchini, chopped
16 ounces mushrooms, sliced
2 cups cubed American cheese
Preheat the oven to 350 degrees F.
Cook sausage. Drain grease and set aside to cool slightly.
In a large, deep baking dish, add sausage, eggs, sour cream, onion, peppers, zucchini, mushrooms, and cheese and stir to mix. Bake for 30 minutes or until golden color.

If you want something special other than your usual fry-up, do eggs benedict, it's my abosolute all-time favorite meal.
Toast an english muffin, and on each half put a slice of ham or canadian bacon (warm it up first), then a poached egg, then top it with Hollandaise sauce. (if you don't want to make it you can get the dry mix in packets.)
Serve home fried potatoes, fresh fruit, and hot coffee on the side!
PS: If you want to do special benedicts, add a slice of swiss cheese and some steamed asparagus to each....
or replace the ham with bacon, and add a slice of fresh tomato and some steamed (and drained) spinach.
or make them with sauteed mushrooms & onions and brie cheese. (with ham or not)
or spread cream cheese on the english muffin halves, and add smoked salmon maybe some fresh chives or asparagus...
Use your imagination, it will be delicious!

(easy - get some water just enough to cover eggs; bring it to almost boil; crack eggs in and reduce heat; cook 3-6 minutes; sprinkle paprika and salt and pepper on after)
