Sort of like a window seat? but with a mattress instead? If so, use 2x4s to build a box to the dimensions of the closet but wide enough for a twin mattress.(They do have the shorter twin mattresses available but if it is really nonstandard it may have to be custom made.) On the "top" you will need to build in supports. Then use plywood across the top and put your mattress on this. the only side you will need to worry about is the "front" out facing side. Furniture grade plywood will enclose it or you can put doors on it and use it for storage under the bed.

It certainly helps to have wheels on the underneath bed to avoid skidding, but you can do it.
I have built a number of beds over the decades and they are not traditional in terms of rails and slats, but they are strong and thin.
For each bed, buy a sheet of 1/2 CDX plywood and cut it or have it cut to the size of the mattress you will be using (39x75 for single bed unless extra long, then 78) For each bed buy 3 pieces of 8' 1x2 and 3 pieces of 8' 1x4. If you go to a home center choose pieces with solid straight grain avoidng big knots, cracks etc.
Choose legs for the look you wish. I will plan on 4x4's cut to length. You will have to allow for variations.
You will also need 1-1/2" nails, yellow wood glue, paint or polyurethane varnish, hammer and saw, and 1-1/4" wood screws and screwdriver as well as a dozen 3" wood screws or lag screws. It helps if you have an electric drill and 1/2"-3/4" drill bit and sand paper with a block to hold it flat while you sand. 4 wood or C clamps also are nice.
To make the platforms, cut 2 of the 1x2's to length of the ply, and cut 1 of the 1x2's about in half then to the width of the ply minus the twice thickness of the 1x2 (37.5" for single bed given above) On a large flat surface (driveway or floor), stand one of the 1x2's on edge, lay a bead of glue down the thin edge, set the ply on top, carefully aligning the edge and nail down through the ply into the 1x2 about every 6-8". Do the same thing with an end, putting some glue on the end of the end and putting a nail sideways through the side 1x2 into the end after nailing down. Continue around the ply, until all 4 sides are glued and nailed and leave it flat or stand it on edge to dry the glue, over night is good.
If making two, do the other one now.
It helps ventilation if you can drill holes in the plywood about every foot each way, starting 6" or so in from the sides and ends. Also sand the surface and holes to remove splinters.
If you are going to paint or finish, doing it now is a good idea.
Making the lower platform the same size as the upper makes life a little tricky, but that is what I will plan for. We will assume the lower is to come out sideways.
Having made the platforms, you may wish to reuse them in a different design in the future, so instead of nailing and gluing, I prefer to screw or bolt the rest of the structure.
Start by choosing the legs. I have used 2x4, 4x4, heavy table legs and 1x6 that supports shelves in the headboard. As I mentioned above, I will work with 4x4's.
Cut one of the 1x4's in halves to the exact width of the platform.(39" as given). With the platform on edge, screw through the 1x2 into the 1x4, carefully aligning the edges - the other edge of the 1x4 will stick up above the platform enough to keep the inner springs or mattress in place, about 1.5 inches. It helps to have a couple of clamps to hold the boards. It may be useful to put in only a couple of screws at this time, depending on how you assemble the frame (below*)
For the lower bed, cut the 2 remaining long boards to the exact length of the platform plus 2x4's ( 75+1.5" in example) and hold them in place and screw from the inside. You may find it easier to drill pilot holes in the center of the 1x2 every 6" because the inside is knuckle busting close working. If you are going to mount this bed on wheels, use 2" wheel fixed casters and screw them to the bottom of the platform near the corners and a pair in the middle near the side. (Swivel casters just argue with each other and you are only moving the bed in and out.) Determine how tall the whole thing is with the mattress and springs (if any) on it.
Now cut the 2 remaining long boards for this bed, so the ends extend past the length of the bed and overlap the legs' width. If the bed platform is 75", then the 1x4's on the ends add 2x0.75 and 4x4's add 3.5" each so side rails would be 75+1.5+7=83.5", but I think it is best to set the platform on boxes or use clamps and roughly assemble the bed to mark the side rails. It will also give you a chance to look at the length of the legs and the height of the bed - think of how thick the mattresses are on the lower bed and the upper (for getting into bed).
Screw the side rails to the bed (pilot holes help, see above) and put a pair of long 3" screws through the foot and head rails into the legs. Also put 2 long screws through the side rails into the legs. You may wish to use round head screws on the sides to be more decorative.
This structure is very light, but it is strong enough that I stand in the middle of my beds weighing 250-300 pounds.
The lower bed just barely fits between the legs (depending on their shape). If it is way too tight, you can undo the screws holding the legs and put in a spacer of 1/4" plywood at one end or the other other give relief - it helps if you do this at the trial fit rather than after the side screws are in the legs.
The height of the legs is your choice, I have made them the height of the top of the mattress, shorter, and much longer to support cat climbing platforms. Replacing the head end boards with 1x6 limber (and longer sides) allows putting a box across the top to be a headboard and hold books, lamps, medicine, etc.
