How long do these sort of things keep in the fridge?

As long as it doesn't smell weird or there are no green things on the eggs, it's safe to eat. Seriously, don't keep such things too long in the fridge. Better make smaller portions.

I make a BIG container of potato salad and usually keep it in the fridge NO longer than 3 days.
BUT, IF you're in Japan NOW, this season has been unusually hot, so you may want to keep it only 2 days.
Just a note, when I do keep it 3 days; the first day I usually make it simple potato salad = potatoes, egg, mayo, carrots/cucumbers.... The 2nd day I mat add a bit of onion... Third day some fresh ham, fresh shrimp or bacon... (My hubby likes a different taste everyday.)

*Get big leafy lettuce and make potato salad rolls - GOOD!

About 3 days. Potato salad is alway better the next day, after flavors have had a chance to marry. Like meatloaf, chili, goulash, et al

a real good ingredient of have with potato salad and corn on the cob is southern type pork ribs with KC masterpiece bbq sauce, or some barbecued fowl with KC masterpiece bbq sauce. the two are authentic good the two on the grill or cooked on the broiler on your oven.

i have a 3 day rule about all leftovers~~~as long as it is refridgerated,it will be fine!
