I LOVE to eat red potatoes and I bought some. I want to cook them but I don't know how to or what ingredients to add.
Would you have a suggestion/easy idea on a fast and delicious recipe?

cut in quarters, boil in lightly salted water, when done and strained, add a bit butter and fresh cut chives or green onions. Yummieeeee

I'd have a small steak with it
and if you're vegetarian...creamed spinach

I normally use 2 or 3 small potatoes and one large onion per 2 people with this.


Home Fries

2-3 small red potatoes
1 large red onion
dill
rosemary
parsley
crushed red pepper
fresh-ground black pepper
garlic
Morton's Nature's Seasons seasoning salt


Chop up potato and onion and put in a frying pan, which has previously been sprayed with nonstick spray. Put on as much or as little of the spices above as you desire (the crushed red pepper is optional).

Cover. Cook on medium heat and check every 5 minutes or so to make sure t is cooking evenly. Flip every now and then with a rubber spatula.

Turn heat to low (2-3 on the dial) once they have been browned evenly. Cook for about 20 minutes more.


Serve with coffee (or tea) and toast.




I also bake fries out of red potatoes. After cutting them, put them on a pre-sprayed cookie sheet and cook at 450 degrees. 15 minutes on the first side and 10 minutes on the other.

Cook them your favourite way. Red skinned ones are called 'Desiree' here. They look wonderful, roughly mashed with some baby spinach added, which will wilt with the heat of the potato.

My favourite, which is a little old now because all the TV chefs have promoted it - cut potato into wedges, sprinkle with salt and pepper, a few good glugs or 6 of olive oil, garlic cloves and Rosemary stalks. Bake until tender - usually about 30 minutes in a 190C or 375F oven.

One thought is to make mashed potatoes. The same way you cook and prepare the russet potatoes. Another way would be to make potatoe wedges. Cut the potatoe into wedges, you should be able to get 8 wedges. Melt one tablespoon of butter, use 1 tablespoon of vegetable oil, whichever one you prefer. Then sprinkle salt, pepper, and another spice such as rosemary or garlic powder. Bake in the oven at 400° for 30 minutes or until brown and tender.

Red Potato Bites

These wonderful sour cream, bacon and chive-stuffed red potatoes are a perfect appetizer for any occasion. Easy to prepare ahead of time, top off with Cheddar cheese, and broil as your guests arrive. A friend forwarded me this recipe and I cherish it.

INGREDIENTS
1 1/2 pounds small round red potatoes
4 slices bacon
1 cup sour cream
1/2 teaspoon seasoned salt
1/4 teaspoon black pepper
1 tablespoon chopped fresh chives
1/2 cup shredded Cheddar cheese
parsley

DIRECTIONS
Preheat the oven to 375 degrees F (190 degrees C). Place potatoes in a saucepan, and add enough water to cover. Bring to boil, and cook until tender but still firm, about 10 minutes. Drain, and cool in a bowl of cold water.
Cook bacon in a skillet over medium-high heat until evenly browned. Drain, crumble, and set aside.
Remove cooled potatoes from water. Pat dry with a paper towel, and cut in half. Using a small spoon, carefully remove a small amount from center, leaving approximately 1/4 inch rim around each potato. Set reserved potato aside.
In a bowl, mix together reserved potato, sour cream, bacon, seasoned salt, pepper, and chives. Spoon a small amount of mixture into each potato half and place on a baking sheet. Top each potato off with some shredded cheese.
Bake for 10 minutes in the preheated oven, or until cheese is melted and potatoes are warmed through. Garnish with parsley, and serve.

Red Potato Chicken

Herby, saucy chicken breasts baked with red potatoes and Italian-style salad dressing. That's right, just 3 ingredients! A simple, tasty main dish. For a variation you can actually use any type of salad dressing you like, but I find the creamy type works best, as it has less oil.

INGREDIENTS
4 skinless, boneless chicken breast halves
15 potatoes
1 (16 ounce) bottle Italian-style salad dressing

My favorite is red potatoes, onions, green beans and crumbled bacon. Pre-cooked potatoes and quarter.
Cook bacon till crispy and crumble. Cook onion in a little bacon grease then add beans and salt and pepper. put everything back in pan and heat through.

You could boil them until there are done and top with butter or add garlic powder to it. You could cook them with ham and green beans and serve with butter and bread. You could make potato salad out of them.

cut the potatoes into wedges, put them in a pan with butter,salt,pepper,garlic,onion(raw or dried),parsley,italian seasoning,basil,and whatever other spices you like and fry them till they are soft and golden brown. DELICIOUS

Cit them up and boil until almost done, spray w/ pam sprinle with bread crumbs , grated cheese and garlic powder, finish witj=h basil or oregano, bake til brown. Serve with Alfredo sauce or ranch

cut them up and boil them in water..sprinkle salt in the water.

keep checking potatoes until they are tender and then dump out water and put them back in pot..add 1/2 stick of butter and parsley very good
