I want to down play the shimmer/shine with more neutral colors. The colors are on my bed spread so its a big centerpeice.

Burgundy and gold are such strong colors I personally feel that to go neutral will actually take away, not add to. Consider, you'll need to think about this, blue. Blue is a natural with burgundy and goes very well with gold. It will enhance those colors which is what you want to do but it will also meld together so that no color is overpowering. Hope this helps.

I would suggest a medium gray, like Sherwin Williams' "thunderous."

off white would probably look best and help to tone down teh centerpiece making it very elegant.
