Under the old covenant you sacrificed animals as obedience and remission of sins. Because as the Bibles says in Hebrews without the shedding of blood their is no remission for sins. No forgiveness. It is called the Mosaic Law. Since we are all sinners this had to be done continueally, as Job was doing. Also once a year, the High Priest had to enter what is called the Holy of Hollies which was a very sacred place in the Temple and he would offer sacrifices for the sins of the people. He was the only one allowed in. Now, under the new covenant, Once Jesus died on the cross, all who have accepted him as Lord and Saviour go to straight to him in Prayer where ever they are at. Under the old covenant all sacrifices had to be at the temple and sacrificed by the priests, now we who are saved can pray anytime anywhere because Jesus, the son of God, was a perfect sacrifice, who died once for all, and when he arose from the grave, he forever washed away our sins. All you have to do now is believe and become born again, Jesus said in John 3:3, except a man be born again he cannot enter into Heaven, a simple pray believing on Jesus will now forever open the door to the Holy of Hollies for everyone, not just the High Priest. Anyone can go now, just bow your head and say this simple prayer believing, Dear Jesus, I know and confess that I am sinner in need of salvation. I believe you died on a cross at calvery and arose from the grave to wash away my sins, I ask you right now to come into my heart and save me, I pray this Prayer believing in the name of Jesus Amen. If you prayed this prayer with a sincere heart you are now a child of God, rejoice that your name is written in the Lambs book of Life. The old covenant was between God and the Israelites. The rainbow is a symbol of his covenant and promise to never again flood the land. It also involved much more law than the new covenant and animal sacrifice for atonement of sin. The new covenant is that Christ died on the cross once for all for atonement of sin, and that whomever believes in Him shall not perish, but have ever lasting life.

Actually covenant means agreement between two people, God's covenant with Moses was that if they follow My laws then I will set them free and give them the land promised to Abraham, Israel and Isaac. This was known as the Mosaic Covenant because it was given to Moses.
Moses, his priests and even his brother Aaron, who was a priest, took the original law and turned it into the Deutoro-Levitical law which was that followed by the people of Israel, the chosen people of God. Judaism didn't get it's name until mach later.
The New Covenant is givin directly by Christ to his followers, it was an open covenant, which did not do much to change the previous, He just made it clear in two simple phrases. Two that were already written about in the Old Testament but comprise the will of God to make is simple for us to understand. These were "Love God with all your soul, mind and heart" and "Love thy neighbor as you would love yourself". These two encompass the Ten Commandments.
Now we must remember that the Old Testament has other covenants, the Abrahamic Covenant, the covenant with Noah, the Davidic Covenant, etc... These were made by god with the respective persons mentioned, God reaching down trying to convince His people of their need to see Him as their only God, but these failed until Jesus came to complete the prophecies of the Messiah, and therefore we can be in eternal bliss with God and Christ and the Spirit, the angels and saints.

The "Old Covenant" is usually referred to as the Mosaic Covenant, since it was given to the Jewish people by God through Moses. This Covenant was "conditional," meaning that God promised to be with the Jews as long as they followed the commandments. All of the commandments of the Mosaic Covenant pointed toward the Messiah, His mission, or His ministry, in one way or the other.
The "New Covenant" was promised to the Jews at Jeremiah 31:31-34. This was necessary because God "divorced" the Jewish people due to their repeated violation of the Mosaic Covenant. The New Covenant was brought to the Jews by Jesus Christ, the Messiah. It is a better Covenant because, as promised at Jeremiah 31:31-34, it rids believers of sin.

The old covenant was the Mosaic Law and all its requirements. It included the annual sacrifices and blessings by a high priest in the holiest spot in the temple. The new covenant involves the shedding of blood of Christ, the high priest, who resides in the holiest of temples, the human soul. The second convenant is permanent and personal and full of mercy and grace, things which the first could not provide.
