my husbands favorite meal is a grilled steak. Grilling saves you on dishes, and the meal doesn't take as long to cook. The whole meal can be cooked on the grill. Grilled veggies and potatoes. *Putting a little extra time into making homemade mashed potatoes(cream cheese and milk) or a special dessert dish is a loving touch to a romantic meal.* I do extensive cooking at home, but a gourmet meal doesn't have to take a long time in the kitchen.

Depends what his favorite meal is. Even though it's nothing fancy, when my boyfriend comes home from work his absolute favorite meal is chicken Alfredo. I make grilled chicken and slice it on top of a bed of linguine with a homemade Alfredo sauce. It took me a few tries to get the sauce just right, but now I've made it like a hundred times so it's perfect. Serve with fresh grated cheese, some bread sticks and sometimes a nice salad. Don't forget the wine! It isn't so much the meal, as it is knowing it's his favorite and I put the effort into it. He loves it.

One time when my boyfriend was busy in the studio all day I stayed home and cooked him an extremely time-consuming but very rewarding dinner of bacon-wrapped asparagus (so easy you won't even believe it, the link to the recipe is below), roasted garlic gnocchi with just a creamy beschamel sauce (such hard work but SO worth it, also below), and a spinach salad. the gnocchi is heavy enough to overlook the whole meat-centricity we cling to every night, and the spinach salad is sweet, tangy, and bold.
All you have to do for the salad is cut up half of a regular package of bacon into the smallest pieces you can manage- partially frozen bacon if the easiest to dice- when the bacon is crispy, remove it from the fat but do not remove the fat from the pan.
add about 1/4 cup of dark brown sugar and about 4 Tbsp of white vinegar- the vinegar will sizzle, don't hold your head above the pan or it'll sting your eyes but about 5 minutes later it's all good- let this simmer for as long as you've got time for, the longer the better- and right when you're ready to eat, turn the heat off under the brown sugar/vinegar and add a half of a red onion, cut in half and as thinly sliced as you can cut it, and about a cup or so of sliced button mushrooms.
stir it all up, let the sauce get happy with the onions and mushrooms and then toss it all with one bag of baby spinach, sprinkle the bacon on top. SO GOOD.

It's shepards pie with ground beef instead of lamb and it's very tasty.
I'm very italian and i love any chance i get to eat homemade spaghetti and meatballs. You don't have to spend a large amount of time in the kitchen for a meal to be special. I think it's the mood that makes it special. Turn out the lights and light some candles, get the expensive silverware/dishes. Get some wine. Set the mood. that's what makes it special for me.

I love cooking!
My bf loves when I cook for him! About a week ago, I made him a spinach salad with toasted almonds and strawberries with spiced shrimp and a lite vingrette along side a nice pan-seared salmon. I also added peppered chicken..I wanted tro keep it simple and romantic and also note that he is a man...so give him more meat. He loved it! And it was very low fat and packed with protein!

If you eat veal, this one is fantastic, though time consuming:
Veal Lasagna
White Sauce: Melt 4 Tblsp butter and whisk in 4 Tblsp flour, ½ tsp salt, and a few shakes of pepper til smooth. Pour in 3 cups of milk Bring to thickened boil (whisk occasionally) and cook for one minute. Set aside.
1 Tblsp olive oil
1 medium onion, diced
1 green pepper, diced
1 yellow pepper, diced
1 celery stalk, diced
1 zucchini, diced medium
1 tsp butter
1 lb lean ground veal
3 cups white sauce, heated
2 ½ cups shredded mozzarella
Pinch ground cloves
Salt, pepper and paprika
Lasagna noodles, cooked
1.Preheat oven to 375. Butter lasagna dish.
2.Heat olive oil in sauté pan. Add onion, peppers, celery, and zucchini and season with salt & pepper. Cook 8-10 minutes over low heat.
3.Melt butter in another frying pan. Brown veal and drain. Incorporate into veggies.
4.Stir in ¾ cup of the white sauce, add seasonings and simmer 3-4 minutes over low heat.
5.To assemble lasagna, start with noodles, then veggies/meat, then cheese, then white sauce. Repeat layers, ending with noodles, cover with white sauce and remaining cheese. Season with pepper.
6. Bake 20-30 minutes until nicely browned and serve.
I like it with bread and salad. And maybe a Pinot Noir, or even Chardonnay.

My hubby would absolutely die for veal piccata with a lemon caper sauce that I make. Toss in some crab legs or lobster with a lemon garlic butter, bread with balsamic and olive oil, a mixed green salad with balsamic vinaigrette and feta. And if I have time I do grilled asparagus with a hollandaise and maybe Stove Top stuffing.
Let's just say we're both stuffed and the rest of the night is fun. :)

Veal and Avocado Recipe courtesy Rachael Ray
1 ripe Hass avocado
1 wedge fresh lemon
2/3 pound veal scallops
Salt and pepper
2 tablespoons extra-virgin olive oil, 2 turns of the pan
1 tablespoon butter, cut into pieces
1/4 cup dry vermouth or white wine
3 to 4 tablespoons cream, 3 turns of the pan
1 tablespoon fresh thyme leaves, to garnish
2 tablespoons chopped or snipped chives, to garnish
Cut avocado in half all around and down to the pit. Twist the avocado to separate the halves. Hit the pit with your knife to pop it out. Scoop the avocado out of each half of skin with a large spoon. Slice the avocado and squeeze a little lemon juice on it to retard the browning. Reserve the avocado.
Season the scallops of veal with salt and pepper. Heat the extra-virgin olive oil and butter in a large skillet over medium to medium high heat. Add the veal and cook 2 minutes on each side. Remove the veal to a platter or individual plates. Add vermouth or wine to the pan and deglaze it, lifting up any color or veal bits. Add cream and stir it in. Turn off the heat and let cream bubble 1 minute. Arrange the avocado on the scallops of veal. Strap the meat and avocado with sauce and garnish with a generous sprinkle of chopped thyme or chives.

Baby Shrimp Scampi and Angel Hair Pasta Recipe
2 tablespoons extra-virgin olive oil, 2 turns of the pan
2 tablespoons butter, cut into small pieces
1 large shallot, finely chopped
1 lemon, zested
1/3 pound baby shrimp, 300 count
1/4 cup dry vermouth or white wine, eyeball it
1/2 cup grape tomatoes
1/3 pound angel hair pasta, cooked to al dente
Salt and pepper
2 tablespoons chopped or snipped fresh chives
Get your pasta water going. Start the scampi sauce when you drop your pasta into boiling water to cook.
Heat a large skillet over medium high heat. Add extra-virgin olive oil and melt the butter into it. Add shallots and cook a minute or 2, stirring constantly. Add lemon zest and shrimp and heat shrimp through, another minute or two. Add vermouth or wine and tomatoes. Toss another minute to heat the tomatoes through. Add cooked pasta to the pan and toss to coat evenly in sauce and to distribute the shrimp. Season liberally with salt and pepper and serve with chives to garnish.
