Pineapple Cheese Ball

2 8 oz packages cream cheese, softened
2 Cups chopped nuts
1 8 oz can crushed pineapple, drained well
½ cup chopped green pepper (very finely chopped)
2 Tbsp. chopped onion (finely chopped)
Seasoned salt

Gradually stir pineapple into softened cream cheese. Add 1 cup chopped nuts (safe the other cup to roll in). Add green pepper, onion and salt. Mix well. Refrigerate and roll into a ball – or two smaller ones, then roll in nuts. Serve with Wheat Thins.

These make alot and are inexpensive to make. They are really delicious.
Sausage Balls
3 c. Bisquick
1 pound cheddar cheese, grated
1 pound Sausage ( I prefer Jimmy Dean Roll Sausage)
Mix all ingredients well in large bowl. (I use my fingers) Let sit 1/2 hour. Roll into balls and place on cookie sheet. Bake at 400' for 15 minutes or golden brown.

Here in England people often serve smoked salmon as an appetiser - just arrange a few slices nicely on each plate, grind some black pepper over, and add a slice of lemon. Serve with buttered brown bread and a nice chilled white wine.

7 layer dip and chips!

1-2 cans fat free refried beans (which I warm up in a pan, it makes it easier to spread) - to which you can add 1/2 package taco seasoning if you prefer.

1 pkg Calvado guacamole

1 large container Breakstones or Daisy Sour Cream

1 Cup grated cheddar or mexican cheese

1-2 medium tomatoes, diced

4-5 green onions, sliced

1 can sliced black olives



top with lettuce, which has been sliced into thin strips.

Layer ingredients in a casserole dish and serve immediately with Scoops or Tostitos chips - YUM!

Hummus in a bread bowl. Just garbanzos, tahini, garlic, lemon, salt and white pepper. Whiz it all up and dump into a store bought bread round you've hollowed out. Parsley oil is great to float on top of it. And buy an extra round of bread to cube up for dipping. You're done in less than 30 minutes.

Veggie pizza,, bake a tube of crescent roll dough in one piece...let it cool and spread it with a combo of cream cheese and sour cream mixed with that buttermilk ranch dip mix. Top the roll and spread with your choice of chopped veggies and shredded cheese. It sounds time consuming but its not. I make the "crust" ahead of time and just keep it covered and I also make the sour cream/cream cheese/ ranch dip thing the night before. My favorite combo of veggies are cauliflower, broccoli, scallions, and radishes all chopped up into tiny pieces and I use shredded sharp cheddar cheese.

Pickle dip - its like pickle wraps without the pain of wrapping.

DILL PICKLE DIP

1 (8 oz.) carton sour cream
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/2 to 1 c. dill or kosher pickles (chopped fine)

Combine all ingredients. Chill to use.

I take a stuff large black olives with cheese and spam,put a pretzel stick thru them and serve.You can put diced salami and white cheese too.Easy and look so pretty on a nice silver tray....
