My favourite is pineapple relish which is prepared by
mixing mangoes, grapes, apples and pineapple all
cubed and the relish is coconut milk with mustard powder,
This is the favourite at our community weddings. But if
you have no time and energy see above so many recipes
mentioned you can always cube the pineapples and
pin it to toothpick and sandwitched between cheese
cubes. A nice starters to go with any drink. Cheers!

Pineapple is excellent with ham. Cut your pineapple into slices. When preparing the ham, use toothpicks to place them all over the hams surface. Use the juice, mixed with brown sugar, as a glaze.
Also, any salad is good with pineapple.
Pineapple is awesome on pizza with bacon.
Puree it and mix it with orange juice. If you want an alcoholic beverage, add vodka and a dash of grenadine.
Ever dip pineapple in chocolate. It's really good!
Excellent on ice cream!
Fried pineapple fritters.
I recently used pineapple to make a fruit salad look like a flower arrangement. Lots of cutting though, and can be difficult to work with.
Also the next time to make an apple pie, cut some thin slices and throw it on top of the apples. Not too much. Maybe 1/8 in. thick.

Wrap Prosciutto around pieces of the fruit for a delicious snack. Try grilling pineapple with some honey and lemon or lime juice for a sweet treat. You can make lot's of glazes or sweet sauces with pineapple or make a good old fashioned pineapple upside down cake!

dessert suggestions
firstly, cut the pieapple into rings and saute in a littlle unbsalted butter with a touch of brown sugar in it. once warmed through, add some rum and flambe. Serve with coconut ice cream...
Or, make up some custard with a touch of sherry in it, chopped pineapple, and stuff pankaces with it (rolled up like canneloni tubes) which is wicked but very simple.
You could also freeze the juice of the pulped fruit with some sugar(to taste) on a deep sided tray, and intermittantly keep fluffing the mix up with a fork - you then get pineapple Granita. You can add any number of liquers to this.
You could also use the pineaple juice as the acid base in a marinade....

you can always bbq pineapple.
There is a Thai food restaurant that I go to that cuts the pineapple in half, then carves it out and uses the pineapple with rice, shrimp, and assorted light veggies (carrots, broccoli, snow snap peas) and cook it up and serve it in the pineapple.
Pineapple shakes! So tasty.
Pineapple juice, pineapple marinade, baste turkey, ham, or chicken with homemade pineapple marinade.

ooh definately go for the pineapple & melted cheese on a breville/toasted sandwich,yummo!maybe add some tomato sauce if you like,does taste really nice,like a pizza taste.
you could try pineapple and whipped cream for a dessert,of make some pineapple smoothies.

ham tastes great with pineapples.butter up some white bread,put 2 slices of ham on it.and top it with a slice of pineapple & cheese.preheat oven to 350 degrees,put the bread on a cookiesheet,and place in the oven.once the cheese melts,remove it from the oven.i made this a lot of times,it's called hawaian toast.

i use pineapple on baked hams also fruit salads and sometimes when we grill burgers we topped them with pineapple and swiss cheese romaine lettuce and a dab od miracle whip
