Not a good idea to take a 3 day-old kitten from it's mother. In order to bring that kitten to school, she'd need to bring the momma cat and all the kittens, which might be more interesting anyway. If the kitten goes to school alone, it may die.
Of course, kids need to realize that life is not always predictable, so if someone promises something that's beyond her control or something happens so the promise cannot be kept, children need to realize that. That would be better than trying to scramble to come up with a substitute.

Definitely NOT the 3-day old kitten. Your best bet is Johnny--the widower. The dog may bite little kids, whereas a cat is more frightened in a different and crowded atmosphere. So sorry to hear of your loss.
