I love eggplant Parmigiano.
Peel the eggplants and slice them.
Dip them in a eggwash and bread them with breadcrumbs.
Fry them until golden brown.
Place in layers in a baking dish putting Parmesano and Mozzarella cheese in between the Layers with some Prepared Italian Spaghettie sauce.
Top with lots of Mozzarella cheese and sauce.
Salt and pepper to taste.
Bake in oven at 350 for 1 hour or until the cheeze start to brown/Bubble.
Yum.

However you cook it you should salt it first. After you cut it or slice it layer it in a colander and salt each layer. Don't put too much salt on it, but a generous sprinkle. This will allow all the extra water in the eggplant to drain off and when you cook it it will hold it shape better. Have you ever had a piece of eggplant that's all mushy? It's because there is too much water in it. Leave it to drain for about 2 hours in the colander and then give it a real quick rinse to get all the extra salt off the surface. Then you can roast it, grill it, bread it, saute it, etc... and it will hold it's shape and be incredibly delicious and not be mushy.

Poor man's caviar is good.
First barbecue or roast the eggplants until they char on the outside. Let it rest then scoop out the flesh beat it with some olive oil and season. Can be served on some toasted bread.

I keep it simple. Cut it into round 1/4" chunks, toss lightly with olive oil, salt, pepper, roast in the oven at 350 for 10-12 minutes. Delicious.

slice eggplant paper thin slices,dip in eggwash, then flour both sides,finally sautee gently in hot EVO.Place them on towel to get excess oil off.Now you can make a great eggplant lasagna using these eggplant slices in place of pasta.The fresher the ingredients the better,and make sure to use Ricotta!love ricotta!

I grill it for 20 min. let it cool, and peel of skin.
put the rest in a bowl, and smash it. add 1 cup of sun flower oil, 3 table spoons of mayonnaise, and add small sliced onions. mix it all up until it looks creamy.
Add it on bread, as a bread spread.
& Voilà !

I coat them in batter and fry them! If you like fried zuchinni then its almost the same thing.
