i want to throw the meat away and keep the broth but i want to keep all the protein

yes of course you will lose some of the nutrients of the piece of beef to the water when cooking in water. simmering is better than boiling though and one hour isnt long enough to make certian cuts of beef tender enough.

is something wrong with eating soup?

You should bring water to the boil, and then turn down to a slow simmer.You don't say if you mean salted beef or a joint of beef.Other than roasting, have you tried slow cooking? You use an Electric Crockpot with no water in it.Just put lid on, and cook on Low all night, Meat is tender and really great.

to make broth you need to use BONES not meat. Also, you want to slowly draw the flavour out, not boil it.

Leave in in a crock pot on low overnight, or in a pot in the oven at 200-350 degrees.

The best thing about beef is (a)protien (b)iron. neither are destroyed by cooking. The only thing you can potentially lose is fat. So dont worry about it.
