I have myself looked at the Jewish holy book (no, I'm not Jewish by the way) and on the cover, it reads "Tanakh". So why does everyone refer to it as the Torah (which are just the first five books of [the laws of] Moses if I'm correct)??

Torah (the Law) is just the first five books of the Tanakh.
The rest of the Tanakh is composed of the Nevi'im (the Prophets) and the Kethuvim (the Writings)

The Tanakh, is the Hebrew Bible, which is the compiled writings of the Torah, Nebi'im and Ketuvim (Law, Prophets and Writings).

The Torah, is only the first five books that traditions say were written by Mose - also called the "Written Torah".

Here is a list of more Jewish scriptures / texts:
Talmud, rabbinical writings from the first to the fifth century CE - also called the "Oral Torah".

Midrash, rabbinical material derived primary from sermons (the Hebrew word for "sermon" is d'rash). The primary collections of Midrash were compiled between the fourth and sixth centuries, but the midrashic form continues to the present day.

Resposa, a vast collection (thousands of volumes) of answers to specific questions on Jewish law. If the Talmud is a law book, the responsa are case law.

The Sefer ha-Zohar (Book of Splendor) is the central text of Kabbalah, the mystical branch of Judaism.

the Torah, or Pentateuch, also referred to as the law or instruction of God is the first five books of the Old Testament:
Genesis , Exodus, Leviticus, Numbers and Deuteronomy.

The Tanakh is the entire Old Testament - the Torah, the prophets and the writings - the Hebrew scriptures sacred to the Jewish people and those called by His name.

Tenach is the Jewish term for the Old Testament... it is an acronym for "Torah", the "Niveaen" the Prophets and the "Kituveen" the 'writings'. The Pentatuch is the first 5 books of the OT written by Moses (Gen Ex Lev Num Deut)
