I need to learn to start cooking for me and my daughter (on my weekends) and would like some eay, nitritional ideas to start out with.

Beanie-weenies - can of beans and cut up hotdogs.

grilled cheese - butter one side of a piece of bread, put it butter side down in the pan, add one or two slices of Kraft cheese, butter another piece of bread, put it butter side up.

Pigs in a blanket - different variations.
1 - make frozen pancakes in the microwave. Make microwave sausage. wrap a pancake around a sausage.
2 - unroll a can of crescent rolls - separate the triangles and then cut each one into 2 triangles. cut hotdogs in half and wrap each hotdog piece in a triangle. the ends of the hotdogs will not be covered. look on the package for directions for baking - time and temp.

tuna ball. drain a can of tuna and empty it in a bowl. Add 1 package of lite cream cheese. mix well. add a few drops of Tabasco sauce and a couple shakes of seasoned salt. take a taste to make sure it's not too hot for the kids. it probably won't be and you may need to add a few more drops of Tabasco. Serve with any kind of wheat crackers for dipping.

always bring out the fresh veggies and lite veggie dip.

You'll do fine. Just think about what you are giving your daughter.

I call this recipe "The New Bride's Best Friend" because it was one of the first meals I learned to cook. If you know how to wield a knife and know where the stove is, you can make this one pot meal. You could even make it a fun project for you and your daughter to do together. You get the roast going, and then prepare all of your vegetables.* Set them aside until it is time to add them. Have fun!

STOVE TOP POT ROAST

Flour
1 2-1/2 to 3 lb. rump roast
4 or 5 Tbs. oil
1 medium yellow onion, chopped small
3 cloves garlic, chopped (A clove is one of the smaller pieces that breaks off from the garlic bulb)
1 48 oz. can beef broth plus 48 oz. water
1 tsp. Kitchen Bouquet
3 celery stalks, chopped
8 10 oz. Portobello mushrooms, diced
10 oz. whole baby carrots
4 medium red potatoes, cut into cubes
1 10 oz. package frozen peas OR 1 can peas

Place some flour in a large brown paper bag. Put the roast in the bag with the flour and shake. (This will coat the roast with the flour.) Now put the oil in the bottom of a large, heavy pot on high heat. When sufficiently hot, turn heat down to meduim-high. Add the roast and brown on all sides, turning occasionally. When meat is sufficiently browned all over, stir in the chopped onions and garlic. Cook until the onions are browned and translucent, stirring occasionally so as not to burn. Lower the heat. Add the broth, and an equal amount of water. Add the Kitchen Bouquet. Allow the roast to simmer over low heat, covered, for 2-1/2 hours. At the end of 2-1/2 hours, add the celery, carrots, mushrooms and potatoes. Do not add peas. Continue simmering until the meat is tender and comes apart easily. Test both potatoes and carrots for doneness (soft, but not mushy) as well Just before removing the roast from the pan, cook the peas in a separate pan. Heat through for 4 or 5 minutes. Remove roast to a platter. Remove the vegetables from the pan with a slotted spoon. Surround the roast with all the vegetables except the peas. If the gravy left in the pan needs thickening, use a wire whisk to mix a little flour and water together (do not make the flour mixture thick.) Add the mixture to the broth and whisk with the gravy to blend it together. (If the gravy is too thick, thin with a little water, whisking to blend.) Pour gravy into a small bowl or gravy boat. Serve with the peas on the side.

*If you peel the potatoes ahead of time, be sure to place them in a bowl of cold water so that they do not turn brown. When you are ready to add them to the roast discard the water.

There is one rule in cooking and that is to first read through each recipe. Then have all your equipment out and ingredients ready before you start cooking.

There are a lot of books written on single men or women and there kids.One book is called"make a meal in five minutes" you can also look at the Jane Brody cookbook which does a lot with nutrition. The American Heart Association is a great reference and over substitutes. I have used these books for years when I was a teacher instructor at a top culinary school.
Get books on vegetables, legumes (beans)

A good one I make is a vegetarian stew and then I had lentils to thicken and it gets more protein.The only catch is saute each vegetable separately in small amount of oil, remove and do next veg. Once they are all cooked to there doneness, you can now mix it up all together in a pot and add some vegetarian stock, tomatoespepperes,squash,turnips,rutabega,celert,mushrooms,
There is no end in what you can do. experiment using some of my guidelines and you will be pleased

Pasta is really easy, just buy some pasta from the bag and Prego red sause in the jar (can get some at costco pasta and sauce). then just boil some water and cook the pasta for how long it says on the back. (stir frequently so it does not stick to the bottom ) then taste it to make sure it is cooked enough (meaning soft) then dump into the strainer, then put it into a bowl, then put about a tablespoon of olive oil into it then stir. Then put the sauce in and stir. If you want you can put vegitables in. you should drain the juice to make sure the pasta doesn't get watery

- melt a 2 tbsp of butter for 50 sec in a microwave
- add to butter a half a cup of brown sugar
- add one whole egg
- add pinch of salt
- add a teaspoon of baking powder
- mix all together than add + - half a cup of flour
- mix all
- have to be not a dough and not creamy but between
- put t in a freezer for 20 min
- than make a dozen of cookies put them on a cookie sheet
- to the oven on a medium fire, in the upper lever of the oven
- leave to bake for 10 min (for big cookies_ or 8 min (for small cookies)

Kids love this one and it's all in one pot!
Heat oven to 350 degrees F. (Moderate oven)
Use a large (6 to 8 quart) casserole with a cover that can be heated on the range top (cooker) and used in the oven.
Brown 1 pound minced (ground) meat with 1/2 yellow onion, chopped. Season to taste with salt, pepper, and Worcester sauce.
Add 12 oz. short curly dry pasta, stir to combine. Add one can peeled tomatoes with the juice. Top up with water to cover the noodles.
Bake 1 hour or until the noodles are al dente.
Garnish with chopped fresh parsley, basil, or cilantro.
Enjoy!

Grilled Cheese Sandwich with Tomato Soup. Do you know how to make the sandwiches? I spread a little mayonnaise on one side of the bread, place a couple of pieces of cheese on one of the sides with mayo. Put together. Butter the outside top, place it buttered side down in a hot skillet and cook until it is golden. Butter the other side, flip it over and brown that side (the second side will brown faster than the first.) For the tomato soup you can use your favorite canned soup (like Campbell's). When the soup is hot, sprinkle some shredded cheddar cheese in the center and serve. To make the sandwich "healthier" you can add some lettuce after it's cooked and a slice of tomato.

You could purchase a package of those refrigerator crescent rolls (the kind you pop on the counter and they split open). Buy some Kosher hot dogs - preferably beef - like Hebrew National (they don't use the innards in their hot dogs). Take one of the hot dogs and cut it into thirds. Roll one of the crescent triangles around it so the hot dog sticks out of each end. Bake it according to the package directions. Children generally love those.

Serve a salad whenever you can. Some children just like lettuce and tomatoes and most love Ranch salad dressing - preferably Hidden Valley (that's the brand most of them prefer). Find out what kind of veggies she likes in her salad and add them.

You could fix scrambled eggs for breakfast with a little ham and cheese in it. Served with a piece of toast. Most seem to prefer white bread but see if you can get away with a mild whole wheat.

You could serve hamburgers for dinner - buy lean ground beef. Some children like chicken sandwiches for lunch. My granddaughter loves sliced chicken on bread spread with mayonnaise, a slice of tomato and a leaf of lettuce.

Can you scrounge up a crock pot? (a mom or aunt might have one in the attic) Crock pots only dirty one dish and you can make something edible and healthy without looking after it for hours so you can spend quality time with the munchkin. Beef stew meat, carrots, celery, onion and potatoes mixed with a packet of low sodium beef gravy mix and some water makes a tasty and healthy beef stew. You can also cook chicken legs with a squeezed fresh lemon and Italian seasoning in a bit of water for simple lemon chicken. Pork chops or smoked sausage cooked with 2 cans of rinsed sauerkraut makes a good homestyle meal in the crock pot as well. The basic formula is: inexpensive meat+vegetables+cooking liquid (water or broth)+seasoning=dinner!

You could go to www.foodnetwork.com and choose from different categories. It will show you a recipe, how long it takes to make, and is rated easy, moderate, hard. www.bettycrocker.com is set up basically the same way. www.recipes.com is another good one. Winco foods has recipes at the bulk food bins that are easy. Barnes & Noble has a good selection of books. The other things I mentioned are FREE! Good Luck, happy cooking!

Burrito Casserole Ingredients 1 ½ lbs. ground beef 1 can water 2 cans refried beans 1 package taco seasoning 1 can ro-tel tomatoes 8 oz pkg. Shredded Mexican Cheese 12 flour tortillas Heat oven to 350 degrees. Grease a 9x13 pan or smaller (Pam spray is fine) Brown ground beef and drain. Add beans, ro-tel, water and seasoning. Let simmer on low for 15-20 minutes. Lay 4 flour tortillas overlapped in the bottom of pan. Add enough of the meat mixture to just cover tortillas. Cover mixture with shredded cheese. Repeat order till all mixture is gone. Top layer will have more of the meat mixture on it. Depending on your love of cheese you can use a little or a lot. Cover pan with foil (I spray Pam on it so the cheese won’t stick to it). Bake for 30 minutes. Uncover pan and bake additional 10 minutes. ***This casserole can be made the day before. Just add a little additional time to baking. In addition, this casserole can be made ahead of time and frozen. Works great!!!!
