These are all family tried-and-true recipes. The first three are for the crock pot. I hope you enjoy them.
Texas Hash
(for 5-quart crock pot)
-3 pounds ground beef (I use lean)
-3 medium onions, chopped
-3 green or red bell peppers, chopped (if you don't have peppers and like it spicy, put in 1/2 to 1 teaspoon cayenne pepper instead...you can add some cayenne to spice it up even if you use the bell peppers)
-3 1-pound cans tomatoes (I use crushed tomatoes and can use a bit more)
-2-1/4 teaspoons chili powder
-2-1/2 teaspoons salt (or a bit more, to taste)
-3 teaspoons Worcestershire sauce
-1-1/2 cup raw, converted rice
-------------------------------
1. Brown beef in a skillet and drain off the fat.
2. Put all the ingredients in the crockpot.
3. Stir thoroughly.
4. Cover and cook on Low for 6 to 8 hours. (or High: 4 hours)
*Note: I fix it through step 3 the night before and put the crock pot in the refrigerator. The next morning I take it out 15 minutes before you want to turn it on. I always use the Low setting as this does better.
Ground Beef Stroganoff
(for 5-quart crock pot)
-3 pounds ground beef (I use lean)
-3 medium onions, chopped
-3 cloves garlic, minced
-8 ounce can sliced mushrooms, drained
-2-1/2 teaspoons salt (or a bit more to taste)
-3/8 teaspoon ground black pepper (could use 1/2 teaspoon if wish)
-1-1/2 cups beef bouillon or beef broth
-4-1/2 tablespoons tomato paste
-2-1/4 cups sour cream mixed with 6 tablespoons flour
-------------------------------
1. Brown ground beef in a large skillet. If there is a lot of grease, drain off most.
2. Add onions, garlic and mushrooms to the beef. Saute until the onions are golden brown.
3. Put the beef mixture in the crockpot and add all the rest of the ingredients.
4. Stir thoroughly.
5. Cover and cook on Low 6 to 8 hours.
6. Serve over hot buttered noodles or rice, if you'd like it.
*Note: I fix it through step 4 the night before and put the crock pot in the refrigerator. The next morning I take it out 15 minutes before you want to turn it on.
Barbecued Spoonburgers
-3 pounds ground beef (I use lean)
-2 tablespoons shortening (like Crisco)
-1 cup chopped onion
-1 cup diced celery
-1 green bell pepper, chopped (I usually use red bell pepper or leave it out)
--1 large (or 2 small) cloves garlic, minced
-2 tablespoons Worcestershire sauce
-1 cup ketchup
-1-1/2 teaspoons salt
-1/2 teaspoon paprika
-1/4 teaspoon black pepper
-1 6-ounce can tomato paste (I sometimes use a 12-ounce can)
-1-1/4 cups water
-3 tablespoons red wine vinegar
-3 teaspoons brown sugar (I use heaping teaspoonfuls of granulated brown sugar)
-1 teaspoon dry mustard
-------------------------------
1. Heat shortening in a skillet and brown the beef, discarding the fat.
2. Combine all the ingredients in the removable liner, stirring well.
3. Place liner in the base.
4. Cover and cook on Low 6 to 8 hours (High: 3-4 hours or Auto 5 hours).
*Note1: I fix it through step 2 the night before and put the crock pot in the refrigerator. The next morning I take it out 15 minutes before you want to turn it on.
*Note2: This recipe is a version of sloppy joes. The mixture is very good served on rolls or hamburger buns (especially warmed buns). It is good, too, over cooked noodles or rice or mashed potatoes.
Shepherd's Pie (my family's version)
Meat filling:
-2 pounds lean ground beef
-flour to thicken
-Salt and freshly ground pepper, to taste (for the meat)
-Cayenne pepper, to taste - optional (only use if you like things spicy)
-MSG, to taste - optional (brings out the flavor, but some people are allergic to it)
-1 can (14-1/2 ounce) beef broth
-roux of 2 tablespoons flour mixed with 1-2 tablespoons water added to thicken again, optional
Mashed Potatoes:
-9 medium to large Russet potatoes
-1 stick butter (1/2 cup or 8 tablespoons)
-1/2 to 1 cup milk (depends on your consistency preference)
-Salt and freshly ground black pepper, to taste
Together:
-American cheese or a combination of American and Provolone or American and Mozzarella (your preference, I prefer American)
-------------------------------
To make the meat mixture:
1. Brown the beef in a large pan on low, using a spoon to "cut" the beef into chunks. Turn meat until there is no red left.
2. Salt and pepper the meat. Add the cayenne and MSG if you wish.
3. Sprinkle some flour into the meat and stir rapidly so the juice is soaked up.
4. Pour in the beef broth in a slow stream, stirring while you do.
5. If the mixture looks too liquidy, make the roux and slowly pour into the meat.
6. Optional step: put the meat mixture in a crock pot for 4 to 6 hours on Low to break up any remaining fat. I always do this step because I don't like the "pieces" you sometimes find in ground meat. I start the potatoes about 30-45 minutes before the meat is done.
To make the mashed potatoes:
1. Peel and cube the potatoes, trying to make the cubes even-sized. (If you peel all the potatoes first, and then cube them the potatoes won't be sitting around and getting brown.)
2. Put the potatoes in a 3-quart pot and cover them with cold water. Add 1 tablespoon salt to the water and stir. (The salt is essential. Otherwise the potatoes will be flavorless no matter what you do after.)
*at this point, take the butter out of the refrigerator and cut into pieces & allow to soften
3. Put the pan on High until it boils, then lower the temperature so the water is at a simmer.
4. Cook until the potatoes are soft when stuck with a fork.
5. Drain potatoes well.
6. Put the milk in another pan on the stove and warm it. Don't scald it.
6. Add the butter to the potatoes and mash well. Salt and pepper to taste.
7. Add the warm milk and mash some more. The potatoes should be well mashed and mixed, but not gluey.
Put it together:
1. Put about 1/2 of the mashed potatoes on the bottom of a 4-1/2 quart round casserole dish (size is approximate).
2. Top the potatoes with a single layer of American cheese.
3. Add the entire amount of meat mixture to the top.
4. Top the meat with the remaining mashed potatoes.
5. Top the potatoes with a singler layer of cheese.
6. Bake at 350 degrees Fahrenheit for 15-20 minutes, or until cheese is thoroughly melted but not brown.

We had a cover dish lunch @ my church about 15 years ago & I got the recipe for my "bean casserole" from that gathering. I fix this dish at least once or twice a month & everyone loves it!
In a skillet, brown 1lb ground beef with 1 small chopped onion & 1 clove minced garlic. Drain fat & return to stove over medium/low heat. Add 1 can Bush's baked beans - I prefer the home style or country style, 1 tablespoon of worchester sauce, 1 tablespoon brown sugar, a little ketchup, mustard, salt & pepper. Bring to a simmer & cook over medium/low heat for about 20 - 25 mniutes. You can even serve this on buns like sloppy joes!

CAROL’S MUSHROOM MEATBALLS
1-1/2 lbs. ground beef
2 eggs, slightly beaten
2/3 c. grated parmesan cheese
1/2 tsp. oregano
1/2 tsp. parsley
1/4 tsp. thyme
pepper to taste
1 Can Campbell's Cream of Mushroom soup
1 can sliced mushrooms with liquid
1/3 c. half and half
4 heaping tbsp. sour cream
mashed potatoes or rice
Mix the ground beef, eggs, cheese and seasonings and shape into 1-1/2 inch meatballs. In a large skillet, brown the meatballs slowly on all sides in a little hot oil. Stir frequently. Cook for 15-20 minutes. Drain off excess fat, leaving a little in the pan. Pour the soup into the skillet with the meatballs, adding 1-2 can of water. Stir well. Add the half and half and the sour cream slowly, stirring to blend. Simmer on low heat uncovered for about 20 minutes. Add mushrooms with liquid and cook for 5 minutes. Serve over mashed potatoes or rice with your favorite vegetable, crusty bread and butter, and a fruit gelatin for dessert.

A beef and hominy bake topped with shredded cheese. An easy casserole, made with ground beef, cheese, chili with beans, and hominy.
INGREDIENTS:
1 pound lean ground beef
1/2 cup chopped onion
1 can (16 ounces) chili with beans
2 teaspoons chili powder
1 can condensed cream of chicken soup
1 (20 ounce) can (2 1/2 cups) yellow hominy, drained
2 tablespoons sliced ripe olives
1/2 cup shredded process cheese, or Velveeta
PREPARATION:
Cook ground beef and onion till meat is browned. Stir in remaining ingredients, except the cheese. Spoon beef and hominy mixture into 2-quart casserole. Cover; bake at 350° for 25 minutes. Sprinkle cheese over top; continue baking, uncovered, for 5 to 10 minutes longer.

Shepherd's Pie !!
Ingredients:
5 large Potatoes
Salt
2 tablespoons Butter/margarine
1 dash Milk/whipping cream
Pepper
1 pound Lean ground beef
1 large Tomato chopped
2 tablespoons Chopped parsley
1 tablespoon Tomato paste
1 cup Brown gravy
1 package (10-oz) frozen corn or peas
Cook potatoes in salted water to cover. Drain, cool and peel. Mash in large bowl with butter, milk and season to taste with salt and pepper. Set aside. Saute beef until browned, stirring to keep meat crumbly. Season to taste with salt and pepper. Add tomatoes, parsley, tomato paste and gravy. Stir to mix. Add peas or corn and cook about 5 minutes. Turn mixture into casserole.
Spread potatoes evenly over meat. Bake at 400 degrees 40 minutes until top is crispy brown.

Maid Rites!
Brown and chop ground beef and drain. Add some finely chopped onion and some garlic powder.
Scoop some on a bun and add whatever condiments you like.
It sounds just like a chopped up hamburger, but for some reason it tastes different.

Where I come from we call them hot dishes. ( Minnesota thing) I met a women who moved here from Texas and had no clue what a hot dish was.
Tartar Tot Hot Dish
brown hamburger with chopped onions
salt and pepper
when finished put hamb in cake pan or some other dish suitable for oven. Then add a cam or cream of chicken soup.
( if you want you can add frozen vegetables) Then add a can of cream of mushroom soup. Top with Tatar tots
Cook one hour at 350 degree.....
Some sprinkle cheese on top when it is done cooking.

brown some onions, and add to cooked brown beef.
Top with salsa and serve with tortilla chips and top with sour cream or avocado if you have it. It's like a mini taco. You can even top with lettuce for a taco salad.
Or.... brown ground beef and onions, and add a can of kidney beans, chili beans, and canned chopped tomatoes, and a packet of chili seasoning. yummy easy chili!

Mexican Go lash
Brown ground beef with onions
Drain
Add 1 envelope taco seasoning (as directed)
Add prepared pasta (elbow)
Stir in large jar of Salsa
Cut up Velveeta Mexican Cheese. stir till melted.
You can make it as hot as you want by adding mild, medium or hot salsa and/or adding additional hot sauce.

Here,s a good and easy one. Get yourself a package of Zataran,s red beans and rice. Brown your burger, cook the beans and rice mix together. Just before you serve and chopped onion and chop,ed garlic(if you are in to them). Serve hot and dig in.
