250...
Bake in a preheated oven for 2 hours - the ribs should be tender. Drain any grease and liquid. Pour BBQ sauce over the ribs. Return to oven and bake one more hour at 200 to 250 degrees F.

Well temp & time depend on what prep method you chose. You can marinate, brine or dry rub. I prefer dry rub & then brush sauce the last 30 - 45 minutes of cooking. I rinse & pat dry ribs, then place in center of a large piece of foil. Rub all over with a mixture of bbq seasoning, brown sugar, cayenne pepper, paprika, garlic powder, onion powder, salt & pepper. Seal into pouch & place in fridge overnight. The next day, place in oven on about 225 - 250 for about 1 hour. Unwrap & place on smoker for another 4 - 6 hours, basting often with apple juice. The last 45 minutes or so, brush with your favorite bbq sauce.

The trick to ribs is "low n slow" - they will fall off the bone everytime!

There is no good cook who could or should answer this question without knowing how you prepared the meat. How was it marinated, in what, for how long, how much meat are you cooking, is it an indoor oven or a smoker, etc. Try again. I've been cooking BBQ for nearly 45 years. IT'S ALL IN HOW YOU PREPARE THE MEAT! Good Luck & Blessings
