I hear that people prefer to eat fried plantains in the restaurant because they do not know how to peel a plantain, Is that true?

You are not suppose to lose any meat of the plaintain,when you peel. That actually proves that you don't know how to peel. lol

That's true. And there is a trick to deep frying them crisp that I haven't mastered. But the mushy fried ones are good too, especially when sprinkled with cinnamon.

I know they use the grill to fry the big slices for Jibarritos, but haven't actually watched it done.

To peel a green plantain, use a serrated knife and be prepared to lose some of the meat. Sometimes you can slice it all the way down, but most times you'll be sawing off 4 inch sections. It's ok. They're big and they're filling and that makes them worth the trouble.

Edit: I can usually skin the ripe ones clean. But I always lose part of the green ones.

I never quite got the hang of peeling them quite down but I HAVE gotten the hang of eating them fried. YUM YUMMMM.
