Peel the carrots, slice them on a mandolin, blanch them and freeze in zip lock bags.
Carrot salad: shredded carrots, raisins, mayo, and sugar to taste.
Onions will stay longer than the carrots. 10 lbs. of onions is not that much. I'd make onion soup, top steaks with fried onions, onion rings, dice and freeze for mire poix. I use onions almost in every dish.

Carrot Soup
1 small onion finely chopped
3 C. carrots peeled and coarsely chopped
4-6 T. butter
3 C. chicken stock
1 1/2 C. heavy cream or milk
salt and pepper to taste
Melt butter in large saucepan. Saute onions 5 minutes until transparent, then add the carrots. Cook for 5 more minutes and add stock. Cook another 20 minutes or until carrots are tender. Puree in the blender or if you want a very velvety texture, put through a strainer. Return the soup to the pan and whisk in milk or cream. Add seasonings and taste.
Garnish with creme fraiche and chopped parsley

If you have a cool dark place they will keep for ages. I have a cupboard that is under the stairs to an upstairs suite and it is on an outside wall so it stays very cool in there during the winter. Every fall I buy 20 lbs. of onions and keep them there and they last till the folllowing spring. And I'm not buying onions every time I turn around cuz I use them a lot.

Cream of mushroom soup
5containers of Campbell's cream of mushroom soup
5cups milk
1/2 lb chicken chopped
1/4 pound of chopped onions (optional)
1/4lb chopped carrot
combine chicken, milk, and soup over high heat. Add in onions and carrots gradually.
Notes: You might have to lower the heat to make sure that you don't burn the chicken. Make sure chicken is done by the end.

Why not cut up onion and freeze for future recipes.I believe there is a canning recipe for carrot ts.If not prepare your own homemade spaghetti sauce and freeze in containers.

you can chop and freeze some of your onions and carrots and use them later for soups and stews
onion rings and carrot slaw are a couple of dishes you can make now

Throw in some celery, bay leaves, and a chicken carcass and you have soup.
Stuff a chicken with them
cut into chunks with a potato and put a roast on top of them to bake.

When you say no curry, you are referring to Indian curry. However, Japanese curry is rather tasty and it does not stink to high heaven, like Indian curry does.
