********MARINATED BRUSSELS SPROUTS
Makes about 4 cups.
3/4 lb. sm. Brussels sprouts
3 c. sm. mushrooms
3 tbsp. olive oil
1/3 c. lemon juice
1/2 tsp. Dijon mustard
1/2 tsp. basil
1/8 tsp. freshly ground black pepper
Remove any damaged leaves from the Brussels sprouts, trim the base and cut a small crosshatch in the core to allow even cooking. Swirl the Brussels sprouts in a bowl of lukewarm water to clean them.
Steam or blanch them until just barely tender, about three to six minutes. Do not overcook. Cool slightly, then cut the tip off of each sprout so the marinade will penetrate to the inner portions. Clean the mushrooms and cut them in half.
In a medium bowl mix the olive oil, lemon juice, mustard, basil and pepper. Add the vegetables and toss to coat evenly. Refrigerate at least 1 1/2 to 2 hours, removing from the refrigerator a half hour before serving to take off the chill.
Each half-cup serving contains about 5 grams of fat and 68 calories.
*******BRUSSELS SPROUTS AU GRATIN
1 1/2 lbs. fresh or 20 oz. frozen Brussels sprouts, trim and rinse if using fresh)
1 1/2 tbsp. butter
1/4 tsp. salt
2 tbsp. flour
6 tbsp. milk
1 c. sour cream
2 tbsp. grated Parmesan cheese
Shredded Cheddar cheese
Cook Brussels sprouts until tender not mushy in boiling salted water. Drain well and place in shallow baking dish. Make a thick sauce by melting the butter in a saucepan. Add flour and salt. Cook a minute or so. Remove from heat and gradually stir in the milk and sour cream. Return to heat and cook until thickened but not boiling. Stir in Parmesan cheese and pour over the sprouts. Sprinkle with Cheddar cheese. Place in hot oven or broiler to melt cheese. Serves 6.

Most people don't even like them. But I do - they are yummy. I just cook them in salted water till they are just tender crisp, add butter and eat. They aren't my favorite vegie of all time but I do like them, especially the small ones cuz they taste so sweet.

Cut them into smaller peices or pull their leaves from them.
Sautee in a little butter, salt & a tiny splash of chicken stock.
Don't dare over cook them. That's when they taste horrible.
When over cooked they'll taste like sulphur. The same with cabbage.

I boil them, cut them in half and then sautee with some salt and butter in the pan where I've just fried a steak.
My mom zaps them in the micro and eats with mayo.

Steamed with a little butter and beef bouillion. Don't forget to cut a cross in the bottoms when you're trimming them. It seems to get them softer.
