I have these 2 ingrediants leftover from making Manicottis tonight. I dont want to waste them.....what can I make to use up whats left??

Ricotta can be used in quite a few recipes. Ricotta is used in some desserts too, like the canoli. You can also just take a batch of pasta such as ziti and mix the ricotta, some marinara. Or lasagna. Pesto can be just mixed in with any kind of pasta in lieu marinara or alfredo. Bruschetta is great and easy too. Lightly toast baguette slices with a little olive oil, then top with pesto, tomatoes, mozzarella.

You can freeze the pesto for later or use it on spaghetti tomorrow without any other sauce. Or use it in a salad with fresh tomatoes and the ricotta. I like ricotta in crepes or added into mashed potatoes for something different.

Make Canapes
If you have crackers or sliced french bread, spread a layer of Ricotta and a dab of pesto.
Or slice fresh tomatoes and make a layered stack.
