Try baking spagetti squash - I don't care for squash, but I love this dish!

Slice spagetti squash in half lengthwise & place on baking sheet. Add 1/2 stick of butter & a clove of garlic minced to each half. Bake @ 325 or 350 for about an hour til meat inside is tender & golden. You can serve as is or add some pasta sauce for a topping. It's yummy!

acorn squash
INGREDIENTS:
2 acorn squash, cut in half and seeded
1 1/4 teaspoons salt
1/4 teaspoon pepper
1/2 cup water
4 tablespoons butter
1 heaping tablespoon brown sugar
2 slices bacon, diced
PREPARATION:
Season acorn squash with salt and pepper. Sprinkle with remaining ingredients. Pour water into slow cooker. Add acorn squash to the crockpot, arranging so they do not rest directly on top of each other.

Cook squash on HIGH 1 hour. Reduce to low and cook for about 6 hours longer, until tender.
Serves 4.

I have a really good butternut squash pie recipe. It's your basic pumpkin pie recipe with cooked mashed squash instead of pumpkin and a pecan struesel topping. Yummy!

Slice the squash in half and take out the seeds. Place them center up on a cookie sheet. Fill the hole left by the seeds with a little butter and brown sugar, and bake.

Cut the squash in half and remove seeds. Place the halves face down on a cookie sheet and bake until they're done. Remove the pulp, add some butter and brown sugar, and mix it up. It is excellent!!

Soup, or baked in the oven with some butter and brown sugar and a hit of cinnamon or nutmeg, just a bit though, you could also use honey.
