Idon't knwo about coffee syrup, but I've made coffee liquor before, it's probably pretty similar, first you melt a bunch of sugar in a pot (probably about 2 cups, but I just "eyeball" it, then you make a pot of really strong coffee, mix it in with your melted sugar, and take it off the fire, when it cools to room temp, just add Vodka or whatever and then you can bottle it...

I'd imagine if you just wanted coffee flavored syrup, you could just omit the alco...

"To make a simple syrup, combine 1 cup water and 1 cup white sugar. Bring to a boil, then lower the heat and simmer until it has reduced by half, which should take about 5 minutes."

That is just very thick and strong coffee that you add water to later.
