It would be possible, but the mechanical systems would be much more complex than a simple ramp escalator.

Consider the fact that all the drive systems in a straight escalator are also straight. That means that they require movement around only one axis.

A spiral escalator is actually a helix shape, requiring movement around 3 axes of rotation. This makes every single mechanical part (bearing, axle, fitting, etc.) much more complex, and also more prone to wear and tear, requiring even more expensive parts.

Therefore, a helix or spiral escalator will be possible, but it will be disproportionately expensive compared to a regular escalator. In my experience, the issue of service and maintenance is already a major cost factor that appears to reduce the number of escalators in service.
