I am cooking porcupine meatballs for dinner tonight.What are some good side dishes to go with it? I don't want mashed potatoes there is rice in the meatballs that is enough starch.I was thinking about a small garden salad and steamed brocolli. Any other suggestions ?

Salad and broccoli are both good choices, how about:

asparagus
artichokes
green beans
cauliflower
peas
spinach
squash
zucchini
Make any of these steamed, sauteed, or baked

Here is a receipe for Broccoli salad, it's pretty good and believe it or not low in calories about 254 calories per cup


8 slices bacon
2 heads fresh broccoli, chopped
1 1/2 cups sharp Cheddar cheese, shredded
1/2 large red onion, chopped
1/4 cup red wine vinegar
1/8 cup white sugar
2 teaspoons ground black pepper
1 teaspoon salt
2/3 cup mayonnaise
1 teaspoon fresh lemon juice
DIRECTIONS
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, and crumble.
In a large bowl, combine broccoli, cheese, bacon and onion.
Prepare the dressing in a small bowl by whisking together the red wine vinegar, sugar, pepper, salt, mayonnaise and lemon juice. Combine dressing with salad. Cover, and refrigerate until ready to serve

I would serve it with Specialty Mashed Potatoes, and a carrot salad w/ pineapple and raisins. The mashed potatoes : Make regular mashed potatoes the day before, only instead of milk use sour cream and cream cheese, and 2 Tblsp. Butter. Add a tablespoon or two of chives. Put the mixture in a baking dish, and push thin slices of butter here and there into the mashed potatoes. Store in refrigerator overnight. Bake in oven for 30 min. or til done at 350. The carrot salad you shred carrots, drain a small can of crushed pineapple, add half a cup of raisins, and real mayonnaise. Make it earlier in the day so it has a chance to sit in the fridge and let the flavors blend. You may want to add more mayo to taste.

Brocolli and a side salad would balance nicely. How about just putting some hollandaise over the broccoli? I think dinner sounds awesome.

How about this for a neat combo of the two??

Tanimura & Antle Sweet Gem™ Chopped Green Salad
INGREDIENTS
2 heads Tanimura and Antle Sweet Gem™ Gourmet Lettuce
4 green onions, chopped
1 cup snow peas, chopped
1 green pepper, chopped
1 cup broccoli, chopped
1/2 cup fat-free red wine vinaigrette salad dressing
4 cloves fresh garlic, minced
3 tablespoons blue cheese, crumbled
DIRECTIONS
Remove outer leaves from Tanimura & Antle Sweet Gem™ lettuce, and set aside. Chop Tanimura & Antle Sweet Gem™ lettuce hearts.
Mix together: chopped Tanimura & Antle Sweet Gem™ lettuce hearts, green onion, snow peas, green pepper, broccoli, vinaigrette salad dressing and fresh garlic. Season with pepper and serve equal portions of the chopped green salad on beds of Sweet Gem™ Lettuce leaves.

Here's an idea ~

Broccoli Slaw

1 (12 ounce) package broccoli coleslaw mix
2 bunches green onion tops, chopped
2 (3 ounce) packages chicken-flavored ramen noodles
1 cup slivered almonds
1 cup sunflower seeds
1 cup oil
1/2 cup white vinegar
1/2 cup sugar

Mix slaw, chopped onions, noodles only from Ramen noodles (crush them with your hands), almonds and sunflower seeds together in bowl.
Make dressing w/oil, vinegar, sugar, and add the 2 packets of flavoring from the Ramen noodles.
Add dressing to your taste- I used about half.
Note: Instead of white vinegar and sugar, I used 1/2 cup of flavored rice vinegar

How about Sauteed Spinach in EVOO with a little garlic and a Cucmber Tomato salad.

Squash, zuchini, bell pepper, onion, and mushrooms sliced. Melt butter in a sauce pan add garlic salt, pepper, worchestershire sauce and tabasco sauce. Cover and cook on medium for 30 to 40 minutes stirring every 5 minutes. you will love it.

How about you sautee some baby spinach (or other fresh spinach) in olive oil and fresh garlic? Add a little salt and pepper and you're good to go~
