Excellent question! I would have to say that it changes based on who's leading the anti-Mormon bandwagon that week. While I didn't appreciate his tone, or question details, MeatBot posed some decent questions when he was leading the bandwagon. Buzz s usually has an interesting take on it all too, although he normally just answers questions about Mormons instead of asking them. There are others, but I don't even know if they're still around. What I liked about MeatBot and Buzz s is actually what made them sort of dangerous, they know quite a bit about our beliefs, and bring up interesting points - the problem is that they do it (MeatBot more so than Buzz s) in a very "You're beyond stupid and I'll prove it to you." kind of way.

I like Fireball226 because she's so consistent, and very seldom insults atheists. I felt very sorry for her, awhile back, when she was being plagued by clones. She's very much my opposite. Her responses are so brief, they're almost terse -- where I tend to write long monologues. We're opposites in just about everything. Perhaps that's why I like her. She's a worthy adversary.
I also like The Church Lady and her fundie ways and how she makes up clever new words -- "atheolutionists" is one of my all time favorites.
No such list would be complete without (((((Pangel))))) and I do miss Debra M and her quiet dignity. There are many more, but you asked for one and I've already given you four. Actually, I pretty much like most Christian, especially if they're not sending me hatemail, or if they're not threatening me with bigoted promises of eternal torture in Hell.
Edit: Yes, Crimsonandclover drives me wild, but I really do enjoy her off the wall zingers.
Edit: Dang! I forgot Father K. What a good sport he is!

Lots. And there are lots of fences opposite the average atheist. I could name among Christians Rachel, Father K, Debra M (much missed), Primoa because he's so polite, Helen and Myaloo. Pangel, obviously. I always get excited when I see Crimsonandclover posting questions even though she drives me mad and is probably a bit mad herself. Fireball is MUCH better now that she actually answers questions instead of scolding other users.
But there are at least twice as many I've forgotten.

My favorite Christian is probably Mandy43110. Nothing rattles her either! She is endlessly patient and respectful!

My favorite christian right now is Sparkles9. From my perspective, if more christians were like her, the world would be a better place.
Then, of course, there's everyone in my contacts.

Primoa. He is BEYOND fundamental Christian but is THE sweetest guy. I love him to death.
Rachel is the other....she's more of a partner in crime though. Does that count?
Father K. I sometimes totally forget he's a priest. He's a total trip.

Ishvarlan. He's about the only honest commentator from the Jehovah's Witness stable. I don't think he actually is a baptized member, though (which could explain a lot.)
