The baby is on most things now (mashed down of course). I am a terrible cook, and want us all to start eating helathy as we survice on processed food at the moment (not the baby though, she has home cooked baby meals or jars)

But if you know of any VERY EASY and tasy recipes it would be much appreciated. Thanks.

Now here are some of my own recipes:

Try buying those miniature potatoes, skins on, no need to wash, boil them according to package directions, or until tender.
Drain and transfer to foiled cookie sheet, drizzle with lots of extra virgin olive oil, and take your favorite chicken seasoning (any kind of powder will do) sprinkle lots on top of the mini potatoes, make sure they are covered generously. Bake in the oven until skins are nice, wrinkly and crispy.
Baby can have these mashed up.

Peas, carrots, sliced eggplant and zucchini are good side dishes and can be mashed up for the baby.
Steam or boil these.

Try making regular minute rice and mix with peas.
Buy a jar of Jerk sauce to make Jamaican jerk chicken (recipes usually on the container).
All you need is Jerk sauce and chicken legs/breasts/thighs. Make them mild so everyone can have it, usually jerk chicken is cooked til meat is falling off the bone, so baby can have the very tiny flakes too.
That would be an easy and nice Jamaican meal.

You could buy from your Asian grocer, some Chinese broccoli. http://en.wikipedia.org/wiki/Kai-lan
These are tastier than regular broccoli, and very healthy as well.
Steam these or boil until "al dente" or tender, whichever you prefer.
Also, my Asian friends buy string beans or green beans, and they cut the ends, boil them for a few minutes, stick em in a bowl of ice to stop cooking, take a wok or frying pan and drizzle with vegatable oil and minced garlic and fry em up a bit until skins appear wrinkly...these are really tasty and I 've seen them served at Tony Roma's restaurants as well.
You can also use this cooking method with spinach (but no need to boil beforehand).

You can also do an Asian "ABC" soup, using pork meat and bone/carrots/potatoes/onions, even tomatos.
Put these in a crock pot and let it cook all day.
Here's a recipe...you'll see how easy it is and if veggies are mashed, baby can have some as well!

Serve all this with chinese rice (the kind in huge 10lbs bags, wash them, rinse them, leave between an inch of water up from the rice in a pot and cook with lid tilted to let steam out until tender if you don't have a rice cooker.
Baby can even eat rice mixed in with the "ABC" soup.

You can get a jar of black bean sauce from the Asian grocer as well and use that and minced garlic on some spareribs cut into once inch blocks...steam them until cooked.

Try getting fish fillets too...use jar salsa or garlic mayonnaise as a topping and throw it in the oven to bake. Or try Ina Garten's (from Barefoot Contessa) salmon panko (japanese bread crumb) recipe:

BBQ's are good too, and men love to grill. Try Korean BBQ marinades sold in jars at your Asian grocer to apply to beef short ribs, chicken breasts which are also healthy alternatives.
If you don't have a BBQ, do them in the oven, they taste delicious too!

Japanese cuisine is healthy and easy as well providing that your family is adventurous when it comes to food. You can get soba noodles (type "soba" in wikipedia.com), healthy buckwheat noodles, boil, rinse in cold water, add ice cubes to keep the temperature cold, add thin strips of dry roasted seaweed and dip in soba sauce!

You can also make your own Asian dumplings as well, to steam or pan fry.

Use lots of extra virgin olive oil on veggies too and roast them and they are good also. Tomato and cucumber salads with any oil and not cream dressing is good, tomato and mozzarella cheese, etc.

French Onion soup, tons of onions, beef stock, real guyuere cheese, a stock pot and many hours and voila!

Whole wheat bow tie pasta with jar pesto sauce or tomato sauce is good too.

Canned salmon or tuna mixed with some ranch dressing served on a bed of spinach on flaxseed bread makes good lunches and baby can eat the sandwich filling.

Shepard's Pie

using 2 potatos for each person, peel and cut into chunks. Boil for about 15-20 minutes or until fork tender.

Drain.

While potatos are cooking, scramble up a pound (or 2 if you have a family of more than 4) of hamburg. You can add some chopped onion, salt, pepper, anything you like. Cook until done. Spread hamburg over bottom of baking dish.

Open a can of corn (or you can use a bag of frozen corn). pour evenly over hamburg.

With hand mixer, mix potatos (slowly at first or you will make a mess) with 1/4 cup of milk and half a stick of butter or margaine. Add milk by the tbsp. if you need more.

Spread potatos over corn. A trick I use is I keep a bowl of hot water next to me while I do this and use the back of a spoon. Heat up the spoon every so often in the water to keep to potatos from sticking to the spoon and not spreading.

Top with thin pads of butter or margarine and sprinkle with paprika or just salt and pepper.

Bake at 350 for 40 mins.

I like it with ketchup.

YUM!

P.S. this meal is GREAT re-heated so feel free to make a large batch for you and your husband to take to work as lunch or for tomorrow night's dinner!!

p.p.s it's also freezable to make ahead of time and just pop in the oven when ready. If frozen, bake at 350 for about an hour and a half

well I like to broil my chicken in the oven, (no skin) I use chicken breast, and I add spices, like sea salt, garlic, parsley, lemon pepper, black pepper. Very tasty, the secret to great broiled chicken is to put 1/4 cup of water in the bottom of the broiling pan, and make sure that you are watching your chicken turning it often, you should however make sure you cook it for 20 minutes if you don't turn it often though it will burn.

Then instead of having baked potatoes, bake sweet potatoes in the oven, they are healthier and babies usually love them.

Put on some frozen vegetables, such as peas, or green beans, add some lemon pepper for taste, and just 1tsp of butter (helps the lemon pepper stick to the veggie)

Make a salad, I found out that Iceberg lettuce has absolutly no nutrional value. Amazing huh. So I use romaine lettuce, it's easy to cut up, and add what vegetables your family likes, (cucumbers, radishes, carrots) you get the idea. Add some Sea salt, then squeeze 1/2 lemon on top of the lettuce, add 1/4 cup of Olive Oil, add some feta cheese, or pamesan cheese to it, mix it all up really well, and man is it good, I can eat the salad alone for dinner. Lol. That is a healthy meal, you can serve your family, you can puree the chicken for your 8month old, or cut it up into really small peices, you can puree the peas, or green beans, and the sweet potatoes you can mash up for the baby. Beef and Creamy Egg Noodle Casserole

2 lbs ground beef
32 ounces chopped tomatoes, drained
3 tablespoons italian seasoning
12 ounces wide egg noodles (1 bag)
1/4 cup butter
1 teaspoon salt
1/2 teaspoon pepper
12 ounces cream cheese, cubed
16 ounces sour cream
1 cup cheddar cheese, shredded
1 cup colby cheese, shredded
1/4 cup parmesan cheese, grated

Potluck One-Dish Meal
Saute ground beef with italian seasoning.
Drain.
Add chopped tomatoes. set aside.
Cook egg noodles.
While egg noodles are cooking, place in a large bowl the butter, salt, pepper, cream cheese, and sour cream. Set aside.
As soon as the noodles are cooked, drain in collander, shake water out, and immidiately pour into bowl with cream cheese mixture.
Mix to coat noodles and melt cheese.
Grease a 9x13 pan. place half of noodle mixture into pan.
Place 2/3 of the beef mixture on top.
Sprinkle cheddar and colby cheeses on top of that.
Add remaining noodle mixture.
Finally, add remaining beef mixture.
Sprinkle with parmesan cheese.
Bake in 350 degree oven for 45 minutes.

Sure, here are just a few simple meals.

Stir-fry, You can use frozen stirfry veggie mix and just some stripped beef chicken of shrimp. simple sauce comes in a jar.. toss together and cook it up w/ rice on the side.

soup helpers... grab a can of cream of anything (mush.brocc..) and use to cover some chicken breast in a baking dish, toss in the oven for about 30 min

I HEAR U MOTHER OF AN INFANT,I WENT TO KRAFT FOOD.COM AND THEY HAVE SO MANY HEALTHY AND YUMMY RECIPES.I'm a horrible cook as well but i get lots of recipes from there and have yet to hear a complaint,good luck
