glycerin is a food estabilizer sold in pastry shops.
it is used in many pastry recipes as estabilzer, and preservative for food. It also retains mositure and avoids cracking and crystallizing.
The glycerine sold in drug stores used for cosmetic use is liquid and oily and clear in color (transparent). while the one for culinary is transparent but thicker, more like a colorless syrup. You can find it in http://www.wilton.com/store/site/product.cfm?sku=708-14&killnav=1

in the case of the jelly it will prevent the jelly from watering after some hours an also give consistency.
in the case of chocolate figures or fondant it gives elastiicity to the product so you can fold it and work on it.
pectin is a substance that is sold also but is also found in the seeds of apples and grapes mainly, and in peels of them in less amount. It helps the jelly set. In jams it is used for jelly consistency and body.
gelatin is a product that you can buy in any supermarket or pastry shop. it comes in the form of powder or sheets.
both have to be hydrated in cold water before using and then used as recipe calls.
