Make chicken salad sandwiches or roll-ups, cut up chicken, add mayo, onion, celery, tomato, avocado or whatever vegetables you like and with almonds on top, really good!

INGREDIENTS
3 skinless, boneless chicken breast halves
3 slices Swiss cheese
3 slices ham
2 tablespoons all-purpose flour
1 teaspoon paprika
3 tablespoons butter
1/2 cup dry white wine
1 teaspoon chicken bouillon granules
1 tablespoon cornstarch
1 cup heavy whipping cream
DIRECTIONS
Pound chicken breasts if they are too thick. Place a cheese and ham slice on each breast within 1/2 inch of the edges. Fold the edges of the chicken over the filling, and secure with toothpicks. Mix the flour and paprika in a small bowl, and coat the chicken pieces.
Heat the butter in a large skillet over medium-high heat, and cook the chicken until browned on all sides. Add the wine and bouillon. Reduce heat to low, cover, and simmer for 30 minutes, until chicken is no longer pink and juices run clear.
Remove the toothpicks, and transfer the breasts to a warm platter. Blend the cornstarch with the cream in a small bowl, and whisk slowly into the skillet. Cook, stirring until thickened, and pour over the chicken. Serve warm.

I would try a sort of stroganoff...
Thinly slice your chicken ( or cube it) then heat it up in a fry pan with some sour cream (about a cup) and a can of cream soup (I would use mushroom) with about a half a can of milk. Some nice seasoning for it would be lots of garlic! Also try a bit of basil and oregano or rosemary and thyme.
Bring it to a simmering sort of boil over med heat.
Serve over rice or noodles.
Serve with a salad and some nice garlic bread with real garlic in the butter.

I like to make BBQ chicken pizza with our chicken leftovers. This is a basic recipe that you can embellish however you like.
1 cup cooked chicken, diced
¾ cup barbeque sauce
1 (16 ounce) package pre-baked pizza crust
1 cup shredded mozzarella cheese
½ cup thinly sliced red onion
Preheat the oven to 425 degrees. Roll out pizza crust in a pan. Spread barbecue sauce evenly over the pizza crust. Sprinkle with mozzarella cheese. Arrange cooked chicken chunks and red onion slices over the top.
Bake 15 minutes in the preheated oven, or until cheese is melted and bubbly.

did the chicken breast get cooked at the b bq? if so.. then put them in a skillet.. and add water..about a half a cup... then put lid on ..( u can do this whether chicken has or has not been cooked)
add some Teriyaki marinade and sauce.. made by kikkoman.. really good.. let simmer.. with a slice of onion, salt and pepper..
make some fried rice..
put the chicken on top of rice..
chicken will fall apart.. so tender..
this is simple and easy..

Cut up the chicken and put it with some cream of mushroom or cream of chicken and eat it over rice or noodles with some kind of veggie on the side.

I use my left over chicken breasts for tacos and fajitas. Just pull the chicken into shreds and add some taco seasoning.
