Better Buttermilk Biscuits Recipe
2 cups all-purpose flour
1 tablespoon sugar
1 teaspoon salt
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 cup vegetable shortening, chilled, cut into 1/2-inch pieces
3/4 cup buttermilk
In a mixing bowl, combine dry ingredients together with a fork. Cut in the shortening using a pastry blender until mixture resembles coarse crumbs. Make a well in the center and add buttermilk. Quickly fold dry ingredients into buttermilk with your hands until a sticky dough forms.
Turn dough out onto floured surface. Gently fold the dough over itself 3 or 4 times to create layers. Roll dough out to 3/4-inch thick. Cut with a 3-inch biscuit cutter. Transfer dough rounds to a sheet pan. Gather scraps and repeat. Make a dimple in the center to help the top rise evenly. Brush with butter. Bake for 15 minutes in a preheated 400 degree oven until golden brown.

Not over-mixing the biscuit dough. You want the dough to be crumbly when cutting in the shortening, then slowly add your water and mix until it just starts to pull away from the sides of the bowl. Once it starts to pull away and can be formed into a ball, make sure you kneed it 10-12 times before rolling it out (no more, no less).

Here is the easiest way from a southern cook.
1 small carton of heavy whipping cream
self-rising flour
Mix until you get a soft dough. Don't knead the dough too much. Roll dough out on floured surface and cut. Bake on greased & floured pan in 375 degree oven until light brown on top. When you pull them out of the oven be sure to flip them over so the bottom doesn't continue to cook and get over done.

Oh, you could very easily go to any grocery store even and just buy one of her books!! Or, go to .......www.foodnetwork.com.......and request any recipes from any of these ladies or emeril, and just type in biscuits......Or, you can just get the biscuit recipe off of the box of Bisquick.....I think there really tasty, but when I make them they seem a bit dry.... You can always add or take away whatever it is that makes them dry, to moisten them. But, other than the dryness the taste is really good!! Or just go to any refrigeration part of your local grocery store and just buy those already made rolls of biscuits, and just pop the sides on a counter and place them on your cookie sheet and follow the heating instructions, and VWALAA!!! NEVER FAIL FLUFFY BISCUITS
2 c. flour
4 tsp. baking powder
2 tsp. sugar
1/2 tsp. salt
1/4 tsp. cream of tartar
1/2 c. shortening or butter (butter is better for taste and texture)
2/3 c. milk
Cut shortening into flour mixture until it looks like cornmeal. Add milk and stir. Turn onto floured board; knead for 30 seconds. roll out 1/2 inch thick. Cut with two-inch cutter. Place on ungreased baking sheet. Bake in 450 degree oven for 12-15 minutes.
LIGHT FLUFFY BISCUITS
2 c. flour
3 tsp. baking powder
1/4 tsp. sugar
3/4 c. milk
3 tsp. corn oil
1/2 tsp. salt
Sift together dry ingredients; add milk and corn oil. Mix until all dry ingredients are moistened. Turn out onto lightly floured board; knead lightly. Pat out or roll out to 3/4 inch thickness. Cut; place on lightly greased pan. Bake 12-15 minutes in 425 degree oven.
LIGHT-N-FLUFFY BISCUITS
2 c. unbleached flour
4 tsp. baking powder
1/2 tsp. cream of tartar
2 tsp. honey
1 stick butter
2/3 c. milk
Sift dry ingredients, cut in shortening. Mix milk and honey, add to other ingredients and knead lightly. Roll or pat to 3/4" thickness and cut. Place on greased baking sheet and bake for 10 to 15 minutes at 450 degrees.
