CHEESY BAKED MACARONI

1 lb. cooked elbow macaroni
1 cup Velveeta Cheese
1 stick butter
Bread Crumbs

Layer the cooked macaroni and Velveeta Cheese alternately in a casserole dish. End with cheese. Melt butter and mix with bread crumbs until moist and sprinkle over casserole. Bake until the top is crusty.

IF YOU WANT TO GET A LITTLE FANCIER, HERE'S ANOTHER RECIPE:

Macaroni and Cheese Primavera

1 16-ounce package frozen cauliflower, broccoli, and carrots
1 6 ounces pasta such as bow ties, corkscrew macaroni, or elbow macaroni
1-1/4 cups milk
1 teaspoon dry mustard
1 teaspoon Worcestershire sauce
1/4 teaspoon bottled hot pepper sauce
1 8 ounces sharp American cheese, cut into small cubes or shredded
1 4 oz. process Swiss cheese slices, torn or shredded
1 4-oz. can sliced mushrooms, drained (optional)
2 c. soft bread crumbs (about 2-1/2 slices)
2 tbsp. grated Parmesan cheese
1/2 tsp. paprika
2 tbsp.margarine or butter, melted
Snipped fresh parsley (optional)

1. Cook vegetables and pasta separately according to package directions; do not overcook. Drain each well.
2. Return pasta to hot pan. Stir in milk, mustard, Worcestershire sauce, and hot pepper sauce. Bring to boiling; remove from heat. Add American and Swiss cheeses, stirring to melt. Cool.
3. Place cooked vegetables and, if desired, mushrooms on the bottom of an ungreased 2-quart rectangular baking dish. Spoon macaroni and cheese on top of vegetables. For crumb topper, combine bread crumbs, Parmesan cheese, and paprika. Stir in margarine until combined. Sprinkle on top of casserole. Bake, uncovered, in a 350 F. oven for 30-40 minutes or until heated through. Makes 6 servings.

Make-Ahead Tip: Prepare casserole but do not bake. Cover with foil; seal, label, and freeze up to 4 months. (Or, cover with plastic wrap and refrigerate for up to 24 hours.) When ready to serve, if frozen let thaw in refrigerator overnight. Remove foil or plastic wrap. Bake, uncovered, in a 350 F. oven for 45-50 minutes or until heated through and golden brown. Sprinkle with parsley, if desired.

Baked Macaroni Recipe

For baked macaroni as it was probably served at Monticello, we turn to Mary Randolph’s “Macaroni” in The Virginia House-Wife, which is essentially the same as a recipe that survives in the family manuscripts. Thomas Jefferson preferred real imported Parmesan cheese and tried to keep Monticello’s larder stocked with a ready supply. Today, you’ll find labeled “Parmigiano-Reggiano” in the market.

Ingredients

4 cups whole milk
1 pound tube-shaped macaroni, such as small penne
Salt
8 ounces Parmesan cheese (preferably Parmigiano-Reggiano), or extra sharp Farmhouse Cheddar
About 6 tablespoons unsalted butter, diced

Instructions

1. Position a rack in the upper third of the oven and preheat it to 375 degrees. Stir together the milk and 4 cups of water in a large pot and bring to a boil. Add the macaroni, stirring well, and return to a boil. Reduce the heat and simmer, stirring occasionally, until the macaroni is tender (about 2 minutes for fresh, 4 to 6 minutes for fresh and dried, and 8 to 12 minutes for dried and boxed). Lightly drain the macaroni in a colander (it should be a little wet) and return to the pot. Season with salt to taste and toss well.
2. Lightly butter a 2-quart casserole and cover the bottom with a third of the macaroni. Dot it with a third of the butter and shave a third of the cheese over it with a vegetable peeler or mandolin. Repeat the layers twice more, finishing with a thick layer of cheese. Bake until golden brown, about 20 to 30 minutes. Serves 6.

2 lbs elbow macaroni
4 10 oz. Cracker Barrel extra sharp cheese
4 10 oz. Cracker Barrel sharp cheese
2 sticks butter
milk
salt

Preheat oven to 350°F degrees. Cook macaroni according to directions on box, rinse and drain.

Put in a large roasting pan. Slice up the butter and mix with macaroni. Shred the cheeses and stir into the macaroni. Pour in milk until you can see it but not completely covering the macaroni. Season with salt to taste.

Cover with foil and bake 2 hours. Remove foil uring last 15 minutes, allowing top to become golden brown. Do not use any other brands of cheese as it will alter taste of recipe.

**********THREE CHEESE BAKED MACARONI
3 c. elbow macaroni (cooked, drained and rinsed)
1 can Cheddar cheese soup
1 c. milk
1/4 tsp. salt (optional)
1/4 tsp. pepper
1/2 c. shredded Swiss
1/2 c. shredded Cheddar
1/2 c. grated Parmesan
1 can French fried onions
Preheat oven to 350 degrees.
In 1 1/2 quart casserole, mix hot macaroni, soup, milk, seasonings and 1/4 cup of each Swiss, Cheddar and Parmesan. Add 1/2 can fried onions. Bake uncovered at 350 degrees for 25 minutes or until heated through.
Top with remaining cheese and onions. Bake uncovered 5-8 minutes until cheeses are golden brown. Makes 4-6 hearty servings.

Mac & Cheese Lasagna

1 pkg macaroni & cheese dinner, prepared as directed
1 1/2 cups spaghetti sauce
1/2 lb ground beef, cooked and drained
1 cup shredded mozzarella cheese
2 Tbls grated parmesan cheese

1. Preheat oven to 350 degrees F. Spoon half of the prepared dinner into a lightly greased 8-inch square baking dish.
2. Top with half each of the spaghetti sauce, meat and shredded cheese. Repeat layers. Sprinkle with parmesan cheese.
3. Bake for 20 minutes or until heated through.

3 cups elbow macaroni, cooked al dente
1 (10 ounce) can cream of mushroom soup
1 3/4 cups grated old cheddar cheese

Place can of soup in an 8 cup baking dish.
Place dish in preheated 400 F oven, uncovered.
Bake until soup is bubbly, about 12 to 15 minutes.
Remove dish and stir cheese into hot soup until almost melted.
Stir in pasta until coated.
Cover and cook about 20 minutes more.

boil some macaroni drain and place in buttered casserole dish ,add 2 beaten eggs, and some graded sharp Cheddar cheese,salt and pepper, layer these things,bake at 350 degrees for 1 hour

1 bag/box any kind of macaroni/noodles
1 large jar of spaghetti sauce
1 lbs. ground beef
1 small bag of mozarella cheese

Boil macaroni till tender.
Brown all of the ground beef

Mix macaroni, ground beef and spaghetti sauce.
Put in baking dish
Add small layer of mozarella cheese on the top
Bake on 350 degrees for 15 minutes (just long enough to melt cheese).

Serve with salad and/or garlic bread.

Be carefull, my kids love it!
