I'm very fond of barley and would include it in more of my cooking if there was a parboiled variety (like so many brands of rice out there), but I can't find it in any of the stores I have tried.

And I would like to know whether barley contains gluten. Are you sure it is the same kind as wheat gluten? How about rye, oats, etc? I like the taste of oats and sometimes I have rye as a change of pace, but I don't know if they have gluten.

One of the points about celiac people being told to avoid barley, oats and rye is also the cross-contamination problem. Many of these grains are grown in the same fields, at the same time, as wheat. When the grains are harvested, there is no way to prevent cross contamination with wheat. Which is a serious bummer because I miss oatmeal - barley I could pass on. I have heard that oats from Ireland, grown in pure fields, are gluten free.

Also, as you may know, countries vary on gluten guidelines, with the UK and most of EU being more lenient on the amount of actual gluten that a 'gluten free' product can contain.

Gluten is in:
wheat
rye
barley

It is not actually IN oats but major brands of oats are off limits on the Gluten free diet bc the oats are harvested and processed with wheat so considered not safe for the GF diet. Try www.creamhillestates.com for gluten free oats.

Under "publications" you can find guides (for sale on this site) which you may be able to get through your local library branch or library exchange cooperative.

For quick cooking barley, get the pearl or pearled kind. This means it doesn't have the bran coat and comes in a quick cook variety.
