Instead of draining on paper towels, drain on a cookie rack over a cookie sheet. This will allow the excess grease to drain off and the tomatoes won't be laying in an oily blot. Crisping in the oven, as previously suggested will work also, especially after draining on a rack. Good luck and enjoy!

*********Baked Green Tomatoes
1/2 cup Yellow Cornmeal
1/2 cup Plain Bread Crumbs
1 tsp. Paprika
1/2 tsp. Salt
1/2 tsp. Black Pepper
Dash of Cayenne Pepper
4 large Green Tomatoes,
cut into 1/2-inch thick slices
1 Egg White beaten with 2 Tbs. Water
Parmesan Cheese
Olive-oil based Cooking Spray

Pre-heat oven to 450-F degrees. Lightly coat a baking sheet with olive oil-based cooking spray and reserve. In a shallow baking dish, combine the cornmeal, bread crumbs, paprika, salt, black pepper, and cayenne pepper, and reserve. Dip each tomato slice into the egg white-and-water mixture, then dredge through the corn meal-bread crumb mixture to coat. Place slices in a single layer on the prepared baking sheet, and spray the tops of slices with the cooking spray.

You can cook it the same as the recepie calls for. I pull mine out of the pan and bake them for a few minutes to finish them (and make them really crispy) Then sit them on paper towels for a bit to absorb the excess grease.

Drain them on paper towels. Maybe you are using to much oil. I've done the same thing myself sometimes.

Just make sure your oil is hot, use a mixture of cornmeal and flour to coat them, and drain them well after removing them from the oil.

If you're deep-fat frying them, after you remove them from the pan, put them on paper towels to soak up the excess fat.

Yes, my mom also used paper towels to drain them on, and also she placed a paper towel over them.

make sure your grease is hot enough otherwise your just boiling them
