(down and back = 1/5 mile) will cause the least stress and resistance on your knee.

A regular stationary bike would be bad. A recumbent bike would be the way to go. An elliptical however is better still and burns more cals than the bike. Neither 1 has impact like running, which is what is hard on your knees whether it's on a track, a street or a treadmill.
