I'm going to the grocery store in a couple of hours and was really wondering if anybody has a good recipe for dinner tonight.... I was thinking CHICKEN... but other recipes will come in handy.. and they might just make me change my mind. PLEASE HELP!! THANKS!! RECIPES please!!

KING RANCH CHICKEN

3-4 boneless skinless chicken breast
1 tbs of oil for browning chicken pieces
season salt, garlic powder, Mrs. dash original.
1 pkg tortilla chips
1 can cream of mushroom
2 cans cream of chicken
1 can of Rotel Chili Fixins tomatoes
2 cups of Colby Jack or Mexican style shredded cheese

Cut chicken into 1 inch cubes.

Season chicken with your favorite seasoned salt, garlic powder, cumin, and Mrs. Dash.

Heat oil in a skillet and add chicken. Stir fry until done. Transfer to a large mixing bowl.

Add soups and Rotel chili fixins to the chicken. Stir well.

Gently stir in about half the bag of tortilla chips.

Transfer chicken mixture to a 13x9 casserole pan.

Top with 1 more cup of tortilla chips, "for crunch".

Sprinkle with shredded cheese.

Cook in 350°F oven for 30 minutes.

Work/Soccer Mom here...I was just thinking the same thing. I am going to do the 1,2,3....dinner. Grocery store....stop at salad bar..get pre-cut onions, peppers mushrooms....run down the international isle for tortillas and salsa...dairy isle for Mexican cheese and some boneless chicken strips pre cut of course.... and poof...chicken fajitas. I have rice at home...I will just toss that into the rice cooker as I start since it only takes 20 mins for both. Happy eating.

I've been marinating 2 Chicken Breasts in a lime garlic marinaded. I'm gonna Grill them on the BBQ and have Rice with red beans as a side. Maybe a salad.

Beef Bulgogi with Kimchi and Rice.

INGREDIENTS:
2 pounds sirloin, thinly sliced
2 onions, thinly sliced
1 tablespoon sugar
1 tablespoon sesame oil
2 tablespoons soy sauce
3 cloves garlic, finely chopped
1 teaspoon ginger, freshly grated
Freshly ground pepper
1 teaspoon toasted sesame seeds (optional)
PREPARATION:
In a large bowl, add onions to beef.
Combine sugar, sesame oil and soy sauce to form a sauce. Add in garlic and ginger. Mix well.
Marinate the beef in the sauce for about three hours (the longer the better).
Season with pepper.
Grill on a grill, pan-fry or broil for about 15 minutes, or until meat is done.
Sprinkle sesame seeds over dish, serve with rice and side dishes.
Makes 4 servings.

we are going to have chicken puffs. Take your boneless chicken and season it with spices. Brown the chicken, then saute mushrooms to get the water out. Mix cream of mushroom soup (straight out of the can) with the mushrooms. Take some puff pastry and cut it to the size of your chicken breast. (2 pieces top and bottom) then scoop some soup mixture on top of it. put the top piece on and seal with egg wash. Egg wash the whole thing before putting into oven. about 35-40 min until golden brown.

Here is our FAVORITE!

I grill one boneless, skinless chicken breast per person (I like the pre-frozen ones)

When it is almost fully cooked, I baste it with some wild and mild sauce, which is Ranch dressing mixed with Frank's red hot buffalo wing sauce (to taste).

When the chicken is done, I top it with 2 slices of cooked bacon and some co-jack cheese. Serve on a roll with more wild and mild sauce for dipping!

It is AWESOME!

we got a really good deal on some shrimp this week-end so i'm thinking about a variety of shrimp maybe boil some,sautee some in garlic and butter then may buffalo style some or i may just make a shrimp creole oh i forgot to mention i'm going to make some chicken wings also kind of surf and turf

i was thinking something easy for dinner today...(we are out of town for the weekend as soon my husband is done with work tomorrow so i want something easy for to nite (i busted my buns off all week making meals) i was thinking boiled dinner (kielbasa sausage, potatoes, carrots, cabbage with buns on the side with lots of butter. that sounds simple enough.
