I do believe that freshness plays a great factor to the quality and goodness of the meal. Fresh ingredients may be more expensive and can be harder to use but the quality you get is fantastic.

The extra ingredients for a good meal are, good friends, good mood, clever choice in food and beverages, atmosphere, conversation etc ..

Of course fresh fish or quality of the wine are important, but not essential -

I experienced poor periods in my life, in which we shared unforgettable meals with great-friends - but now I'm not as poor and my friends gone away

Well it also depends on the taste. So if the meal is fresh, delicious and it's quality is great (cooked well, not raw) it is a PERFECT meal.

Not everything mate. The skills of the chef still have to be quality as well.

There's no point to hand good things to mediocre hacks!
