I am taking my niece abroad for a week, apart from her passport, do I need anything to prove she is allowed to fly with me?. A letter of permission off her mother, for example.

I don't think so. I bring my niece to Mexico before and all they want is her passport. My niece was 12 years old at that time.

I would call the airline, I would also get a letter notarized by the parents to say you as the aunt have full control and permission on health issue etc for the child. Just in case you end up in hospital and need medical attention

A formal power of attorney to do what has to be done if there is an accident authorize medical help, permission to travel, IDing you as en loco parents.

if shes under 16 yes you need a letter of approval before flying - Scottish law.

You don't need anything, however a letter may not be a bad idea espcially if it is signed and attested by a Legal Public Notary.
