Cooking with Olive Oil
Cooking with olive oil is like cooking with wine. Never use a wine or olive oil that does not taste good to you. An inferior one will leave an aftertaste. If you do the taste test and compare the "pure" to the "extra-virgin" and the you'll understand the difference.
When cooking with olive oil, save your extra-virgin expensive oils for salads, dressings, and vinaigrettes. You can also drizzle it over slices of crusty bread or onto open-face sandwiches. Use it on a baked potato or add it to mashed potatoes instead of butter. Extra virgin olive oil tastes great on cooked vegetables or brushed onto fish or meat before serving.
When sautéing or frying, use either a combination olive oil (one that is simply a blend of extra virgin and regular olive oil) or a straight olive oil.
For deep frying, the olive oil grade "olive oil," is excellent because it has a higher smoke point (410º F) than virgin or extra virgin oils.

Im Italian and in my house their is no such thing as too much olive oil. The chicken would have to be submerged if you were using too much because your pan frying would turn into deep frying. Pompeian extra virgin olive oil is the best though. Just pat dry the chicken with paper towels after you take it out of the pan if you cant take the extra oily feeling or taste. Oh and Canola oil is the worst tasting oil ever just use an extra buck or two for some real oil.

I only ever use olive oil. I keep a few different varieties in the cupboard depending of what I am cooking. I will use a lighter olive oil for fish and chicken and deeper flavour for beef and other red meat. I dont know about deep frying as I dont deep fry anything, but its not the cheapest oil around so i wouldnt be wasting it on that!

Mario Batali says olive oil is good for frying but most people look to an oil with a higher tempurature rating . sunflower oil or vegetable oil or canola oil gets hotter without problems .

I believe you can. But from what I understand, olive oil has a lower evaporating point than canola oil (or vegetable oil), meaning that more of the oil would evaporate faster if you used olive oil. I've only used canola oil, but I've talked to people who have only used olive oil. But there it is :P

You can, as it's an misconception that it has too low of a smoke point. You just have to watch it carefully.
I prefer to use canola oil when I fry chicken though... it has a neutral flavor and you don't have to stand over it all day.

It will depend on the fruit or plant linked to a comparison. In the event you compare a n to a carrot, the carrot is the better of the two nutritional. But once you compare an avocado to the carrot, then this avocado is better. Both equally the apple and avocado, are fruits.
