Sometimes I feel like I COULD do more. I am sure we all do at times. It sure is wonderful to know that God is a forgiving God.

This is a very interesting question! I used to feel that way a lot, when I was a child and teen-ager, and when in early 20s also. At that time, I think the way I was taught in church gave me the idea that we can always do better and serve more. Sometimes this idea can lead to striving and even exhaustion. We can feel that God isn't pleased with us unless we are "doing more." We can feel like whatever we do isn't enough.
I now see things way differently. Having received growing revelation of God's love and acceptance of me, just as I am, and clearer understanding of how He sees me (which is "in Christ") I realize that what He desires most of all is relationship with Him. We are human "beings", not human "doings." We see that this was Jesus' priority in Mark 3:14, when He called the twelve apostles. The verse says, "And he ordained twelve, that they should be with him, and that he might send them forth to preach." "Being" with Christ, spending time with Him, precedes "doing." As we spend time with Him, we get to know His heart, and what His specific plans for us are. Then we will not be running around just trying to do a lot of stuff just because we "think we should" in order to "be a good Christian."
Also, in Ephesians 2:10, it says that we were created unto good works which He wants us to walk in. I believe these are the works that God puts on our hearts as we listen to Him. We then do these things in partnership with Christ, actually, by letting Him live through us and do them through us. (See Galatians 2:20.)
Matthew 11:28 - 30 says we are to take Jesus' yoke upon us, and that it is easy and His burden is light. I don't believe that means we will never get tired when we do His will, but when we truly know His heart, we will be able to do His will and find a rest and refreshing in it, and it won't be a stress and strain on us.
Having said all that, yes I sometimes still feel a sense of "I'm not doing enough for God." Since I have been a Christian for a long time and have a lot of "light" and knowledge, I feel a great responsibility. I desire to truly find and fulfill all that God has planned for me, and sometimes I get concerned that I may "miss it." However, I believe that rather than focusing on "Am I doing enough?" it is more beneficial for me to focus on cultivating my relationship with Him, knowing that anything I am perhaps not yet doing, that He wants me to, He can show me, as I spend time with Him.
Two things that Jesus said to churches He addressed in the Book of Revelation were that they had left their first love (Church at Ephesus), and that they were lukewarm (Church at Laodicea.) He did not say "You aren't doing enough." To the church at Laodicea, He said that He was knocking, and to the one who opens the door and lets Him in, He will come in and fellowship with him/her. (word used in KJV -"sup" - i.e. - eat - so like coming in and having dinner with us.) So again, we see that He so desires that relationship with us most of all. The Bible is full of this theme.
