Im working on a new type of jerk rub but i am having trouble finding out what kind of spices go into either a traditional or Cariabian style. What i am looking for is the spices that go into either one of these dry (key word being dry) rubs.
Please give references for whatever and whereever you get your answers.

I made this rub several times and used it on chicken thighs...absolutely delish!

2 tbs. ground coriander
2 tbs. ground ginger
2 tbs light brown sugar
1 tbs onion powder
1 tbs garlic powder
1 tbs Kosher salt
1 tbs cayenne pepper
2 tsp coarse black pepper
2 tsp dried thyme
1 tsp cinnamon
1 tsp. ground cloves
1 tsp allspice

A blend of allspice, peppers, garlic and onions mixed with the commanding presence of habanero pepper. Use this seasoning rub before grilling or baking.
Good rubbed on meats, fish and vegetables prior to grilling or baking.
Spice ground turkey with this mix for a down island flavored sausage.
Season sauteed potatoes and onions for a side dish.
Mix this spice with flour in a small bag. Add shrimp or chicken and shake to coat before frying or baking.






Ingredients
Allspice, onion, garlic, salt, crushed red chili, black pepper, red and green bell peppers, spices, dried habanero chili.

Dry Jerk Rub

INGREDIENTS:

* 1 tablespoon onion flakes
* 1 tablespoon onion powder
* 2 teaspoons ground thyme
* 2 teaspoons sugar
* 2 teaspoon dried chives
* 2 teaspoons salt
* 1 teaspoon ground allspice
* 1 teaspoon black pepper
* 1 teaspoon cayenne
* 1/4 teaspoon ground nutmeg
* 1/4 teaspoon ground cinnamon
