If I install windows on my macbook pro can I run any and all windows programs on the mac that I could normally run on a windows-equipped pc? i.e. games, word processing, photo/video editing software etc.

Yes, pretty much all of them. Some may run slower. Apple does not support Windows on the mac even though it will run using bootcamp.

Leopard will have an improved version of Bootcamp.

Not really. Unless the windows happens to be bootcamp for mac, i haven't heard it work otherwise. Even when bootcamp is installed, only certain programs work.
