I don't find the politically correct addresses appropriate no matter how they are used. The use of the word man is a universal word for all people....i.e. mankind as in the bible. Once you start to try to appease all genders by breaking names down to those genders it becomes ridiculous. If you want to leave a note for the mailman, do so. If the person who works for the post office is somehow affected by the use of the term because of the use of man at the end, they need to get a life. Being accredited for what you do is what is important, not the title that is given to it. Let's all get past this annoying habit.

I would go with "Dear Mail Carrier" if you want a warmer tone or "To Whom it May Concern" if you want a more formal one.
I would only use the term "mailman" if you are absolutely certain that your mail carrier is in fact always a man. In my city (Columbus, Ohio) we have a group of carriers that rotate for our route. Sometimes a man leaves the mail, sometimes a woman.

Maybe next time you see him, ask for his name. You might be able to inject a little humor into it :
Dear Person Who Delivers My mail So Well,
Please leave the package from ___ on the porch. I really appreciate how well you have done your job. And sorry about the heading, but I don't know your name.

Try postal courier or something. Only 5 year olds can get away with mailman. I don't think they care anyhow.

Even better is to stop them some day and ask them their name.
