My little girl is turning one this weekend. She is allergic to Milk. I was told angel food cake doesn't have milk so I may go that route if I can't find a bakery to make me one without milk. Do you know if it is possible to have buttercream frosting that doesn't actually have milk? If that answer is it is impossible. Anyone know any other really good frostings with no milk?

I should also mention that she cant' have anything that has milk in it - cheese which I would imagine includes cream cheese and most butter.

Try this. Make a small batch and see if you like the flavoring. Im not sure if it will taste off with this recipe but it should hold up very well. Normally butter is used instead of margarine but
that shouldn't be a big deal. A more traditional buttercream such as a French Buttercream or an Italian Butter cream uses a lot of butter and milk. If this recipe works it can be easily altered (remove vanilla flavoring for flavoring of choice) and easily colored.

Buttercream Frosting

1/2 cup vegetable shortening
1/2 cup margarine
1 teaspoon pure vanilla extract
4 cups sifted confectioners' sugar
2 tablespoons SILK soymilk*

Cream margarine and shortening with electric mixer.
Add vanilla. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all of the sugar has been mixed in, icing will appear dry. Add soy milk and beat on high speed until light and fluffy.


*If you're little one is allergic to soy milk as well, do not add the soy milk but add a little more shortning to make it smooth and a cup less sugar.

According to my Better Homes & Gardens New Cookbook, the recipe for Pineapple Upside Down Cake doesn't have any milk. That could be fun and always tastes good. Same for their pound cake recipe, so have that with fruit in the future - probably not "fancy" enough for birthday. Or Carrot Cake with Cream Cheese Frosting - neither has any milk. Applesauce Spice Cake doesn't use milk, but might not be mild enough for a 1 year old. Actually, their Devil's Food Cake recipe uses water instead of milk.

Frostings without milk include 7-minute Frosting; Orange Butter Frosting where you use orange juice instead of milk (same for Lemon Butter Frosting but it's a bit tarter); Fluffy White Frosting and the Cream Cheese Frosting I already mentioned.

Do you mean to buy it made without milk in it?

Your best bet with food allergies is to make things yourself so you are sure of what is in them. Don't depend on commercially prepared foods if you want to keep your child healthy.

Sometimes even the bakery doesn't know whats in its frosting - they may be buying it premade.

If she's allergic to milk, she may also be allergic to butter or other dairy products.

Look up some "cooked frosting" recipes (like 7 Minute Frosting) and substitute water or soy or almond milk for cow's milk.

Don't make frosting with whipped raw egg white in it unless you use dried, powdered egg whites (found in the bakery section of the supermarket - they are safe to use uncooked).

You can substitute soy or almond milk in frosting recipes.

Double check that cake recipe just to make sure. You can use soy or rice milk to substitute for the regular milk in the frosting, or in general. Check with the Whole Foods Market and get their list of lactose free desserts, cookies, cakes etc.

yes but you always have to put it in the fridge to not make the cool whip melt
